Baked Sweet Potato Fries:
  • Sweet potatoes - 1 1/2 lbs , sliced into fries
  • Olive oil - 2 Tbsp
  • Ketchup - for serving
BBQ Quinoa and Black Bean Burgers:
  • Ground turkey - 1 1/2 lbs
  • Tomato paste - 3 Tbsp
  • Cider vinegar - 2 tsp
  • Honey - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/8 tsp
  • Egg yolk - 1
  • Dijon mustard - 1 tsp
  • Garlic cloves - 1 , minced
  • Avocado oil - 1/3 cup
  • Hot sauce - 2 tsp
  • Cooking oil - 2 Tbsp
  • Avocado - 1 , sliced
  • Tomatoes - 1 , sliced ((choose what you like best for burger toppings))

Prep

  1. Make patties - In a food processor puree quinoa, black beans, BBQ sauce, salt, and pepper. Season to taste before forming into 3/4" (2 cm) thick patties. Refrigerate if not making right away. (Can be done up to 3 days ahead)
  2. Make patties - Mix together turkey, tomato paste, cider vinegar, honey, salt, and pepper. Form into 3/4" (2 cm) thick patties. Refrigerate if not making right away. (Can be done up to 1 day ahead)
  3. Make hot sauce aioli - Mince garlic. Whisk egg yolk with mustard and garlic until it gets a creamier consistency. Drizzle in oil while whisking. Stir in hot sauce and lemon juice. Season to taste with salt. (Can be done up to 3 days ahead)
  4. Sweet potatoes - Slice into fries. (Can be done up to 3 days ahead)

Make

  1. Preheat oven to 500F (260C) degrees.
  2. Place sweet potatoes in a sheet pan and then cover tightly with foil. Bake for 10 minutes on top rack.
  3. Place cooling rack in a sheet pan and then place patties on top of cooling rack (this allows any fat to drip off). Brush with cooking oil and salt and pepper.
  4. After sweet potatoes have steamed for 10 minutes, take them out and toss with olive oil and a generous sprinkle of salt. Roast for another 10 to 15 minutes uncovered, giving them a shake midway through. At the same time put the patties in on the bottom rack. Bake the patties for 12 to 15 minutes until they've reached an internal temperature of 165F (74C) degrees.
  5. Slice avocados and tomatoes.
  6. Let everyone assemble their own burgers with as much hot sauce aioli as they want! Finish sweet potato fries with more salt if you want. Serve hot dipped in ketchup.
