Crab Salad:
  • Lettuce, romaine - 2 heads , chopped
  • Cucumbers - 1 lb , diced
  • Tomatoes, medium - 1 , diced
  • Avocados - 1 , chopped
  • Crab meat, jumbo lump - 10 oz
  • Pepitas - 1/4 cup
Chili Lime Dressing:
  • Vinegar, rice - 2 Tbsp
  • Mustard, Dijon - 2 tsp
  • Honey - 2 tsp
  • Limes - 1 , zest of
  • Sriracha (sub hot sauce of choice) - 1/2 tsp
  • Oil, cooking - 4 Tbsp

Prep

  1. Make chili lime dressing - Combine vinegar, mustard, honey, lime zest and hot sauce. Whisk while adding oil. (Can be done up to 5 days ahead)
  2. Lettuce / Cucumbers / Tomatoes / Avocados - Prep as directed.
