Crab Salad:
- Lettuce, romaine - 2 heads , chopped
- Cucumbers - 1 lb , diced
- Tomatoes, medium - 1 , diced
- Avocados - 1 , chopped
- Crab meat, jumbo lump - 10 oz
- Pepitas - 1/4 cup
Chili Lime Dressing:
- Vinegar, rice - 2 Tbsp
- Mustard, Dijon - 2 tsp
- Honey - 2 tsp
- Limes - 1 , zest of
- Sriracha (sub hot sauce of choice) - 1/2 tsp
- Oil, cooking - 4 Tbsp
Prep
- Make chili lime dressing - Combine vinegar, mustard, honey, lime zest and hot sauce. Whisk while adding oil. (Can be done up to 5 days ahead)
- Lettuce / Cucumbers / Tomatoes / Avocados - Prep as directed.
