Soba Noodle Salad
with chickpeas / mango / carrots / mint / basil

With fresh herbs and a Thai-inspired ginger garlic sauce, this soba noodle salad is great served at room temperature or slightly chilled.
Smarts: All elements of this salad will keep for 3-4 days in the fridge. For best results, keep the lettuce, mint, basil and cashews separate and add them just before serving.

Ginger Garlic Sauce:
  • Ginger, fresh - 1 Tbsp , grated
  • Lemongrass (opt) - 2 stalks , chopped
  • Garlic - 1 clove , chopped
  • Soy sauce, low-sodium - 2 Tbsp
  • Water - 1 Tbsp
  • Honey - 1 tsp
  • Vinegar, rice - 1 tsp
  • Oil, toasted sesame - 1 tsp
  • Limes - 1/2 , juice of
Soba Noodle Salad with Mango and Cashews:
  • Ginger garlic sauce (ingredients listed separately) - ~1/4 cup
  • Beans, garbanzo (14 oz / 387 g) - 1 can , drained and rinsed
  • Bell peppers, any color - 1 , thinly sliced
  • Carrots (look for pre-shredded to save time) - 1 cup , shredded
  • Shallots - 1 clove , sliced
  • Noodles, soba - 6 oz , broken into small pieces
  • Oil, cooking - 1 Tbsp
  • Lettuce, romaine - 1 head , chopped
  • Mango, fresh - 1 , sliced
  • Mint, fresh (opt) - 1 Tbsp , chopped
  • Basil, Thai (opt) - 1 Tbsp , chopped
  • Cashews, roasted and unsalted - 1/4 cup

Prep

  1. Make sauce - Ginger / Lemongrass / Garlic - Prep as directed and combine with soy sauce, water, honey, vinegar, sesame oil and lime juice. Divide in half. (Can be done up to 5 days ahead)
  2. Marinate beans - Drain and rinse beans. Combine with half of sauce. Marinate for at least 30 minutes and up to 2 days. (Can be done up to 2 days ahead)
  3. Bell peppers / Carrots / Shallots - Prep as directed and combine. (Can be done up to 4 days ahead)
  4. Cook noodles - Break soba noodles into small pieces. Bring a saucepan of water to boil. Add soba noodles and cook according to package directions. Drain and toss with cooking oil. (Can be done 1 day ahead)
  5. Lettuce / Mango / Mint / Basil - Prep as directed and combine.

  1. If made ahead and refrigerated, gently break soba noodles apart.
  2. Combine bell peppers, carrots, shallots, mango, noodles and chickpeas. Just before serving add lettuce, mint, basil and cashews. Add reserved half of sauce just until salad is dressed to your liking. Serve salad at room temperature or slightly chilled. Enjoy!
