Stovetop Mac 'n Cheese:
  • Pork chops - 4 <1" thick
  • Cooking oil - 1 1/2 Tbsp
  • Honey - 3 Tbsp
  • Dijon mustard - 1 Tbsp
  • Chicken stock - 1/4 cup
Quick Green Beans:
  • Green beans / haricot verts - 1 lb ((haricot verts are skinny French green beans))
  • Butter - 1 Tbsp
  • Grassfed butter - 1 Tbsp
  • Sliced almonds - 2 Tbsp

Make

  1. Preheat a skillet over medium-high heat. Brush pan with cooking oil, and then add pork chops. Sear on both sides for 3 minutes. Lower heat to medium, cover with foil, and cook for another 1 to 3 minutes, until pork reaches 145F (63C) degrees.
  2. Remove pork chops and set aside to let rest. Now add honey, dijon, and chicken stock to pan, scraping up any brown bits that may have formed in the pan (that's the good stuff!). Simmer until sauce has reduced by about one third.
  3. While sauce is reducing, place green beans into a microwave safe container, sprinkle with some salt, and cover with a wet paper towel. Microwave for 2 to 2.5 minutes, depending on thickness of beans. Toss with 1 tbs. (15 ml) butter and sliced almonds. Season to taste with salt and pepper.
  4. Serve sauce over pork chops and enjoy with buttery green beans!
