Spicy Thai-style salad with fresh herbs known as "laab" makes a fresh, flavorful dinner when served in lettuce cups. We've added a mango smoothie on the side to cool things down if you decide to make your laab with extra spice.


Thai Minced Pork Salad with Fresh Herbs (Laab Moo):
  • Green onions - 2 stalks , chopped
  • Cilantro - 1/4 cup , chopped
  • Mint, fresh - 10 leaves , chopped
  • Lettuce, iceburg - 12 leaves
  • Oil, cooking - 1 Tbsp
  • Pork, ground - 1 1/2 lb
  • Fish sauce - 2 tsp
  • Limes - 1 1/2 , juice of
  • Red pepper flakes - 1/2 tsp
Mango Mint Smoothie:
  • Mango cubes, frozen - 4 cups
  • Banana - 2
  • Mint, fresh - 5 leaves
  • Salt - 1/8 tsp


  1. Green onions / Cilantro / Mint - Prep as directed. Peel leaves off head of lettuce to form "cups". (Can be done 1 day ahead)
  2. Make smoothie - Blend mango, banana, mint leaves and salt until smooth. Add a bit of water or other liquid until smoothie reaches desired consistency.

  1. Heat a non-stick pan or skillet over medium heat. Add oil. When oil begins to shimmer add pork and a bit of salt. Saute until pork is cooked through, 4 to 5 minutes. Turn off burner and drain any excess liquid from the pan.
  2. Combine pork with green onions, cilantro, mint, fish sauce, lime juice and red pepper flakes. Season with salt, pepper, and more lime juice or red pepper flakes, to taste.
  3. Serve pork in lettuce cups and enjoy with a mango smoothie!
