Southwest Green Chili Turkey Cheeseburgers:
  • Green chilies (4 oz / 113 g) - 1 can
  • Paprika - 1 tsp
  • Coriander - 1 tsp
  • Chili powder - 1/2 tsp
  • Cumin - 1/2 tsp
  • Salt - 1/2 tsp
  • Turkey, ground and lean - 1 1/4 lb
  • Oil, cooking - 1 Tbsp
  • Cheese, cheddar - 4 slices
  • Buns, gluten-free - 4
  • Tomatoes - 2 , sliced
Side Salad with Tomatoes and Paprika Vinaigrette:
  • Paprika - 1/4 tsp
  • Vinegar, red wine - 1 1/2 Tbsp
  • Mustard, Dijon - 2 tsp
  • Maple syrup - 2 tsp
  • Oil, cooking - 3 Tbsp
  • Tomatoes, cherry - 1 cup
  • Mixed greens - 5 oz

Prep

  1. Chilies - Open can and drain liquid.
  2. Make patties - Mix chilies, paprika, coriander, chili powder, cumin, and salt with ground turkey. Form into patties (1 / serving). If you wet your hands first, it’s easier to work with the meat.

  1. Heat up a skillet or non-stick pan over medium heat. Add cooking oil and then patties to heated oil. Cook on both sides for 5 to 6 minutes, until the turkey patty reaches 165F / 74C. Once turkey is cooked through, top with cheese and cook for another minute.
  2. While turkey patties cook, make vinaigrette by whisking together paprika, red wine vinegar, Dijon mustard, maple syrup, and cooking oil. Season to taste with salt and pepper.
  3. Toast buns. Slice tomatoes for burgers and set aside some greens from your salad ingredients for burgers too.
  4. Toss cherry tomatoes and greens with vinaigrette when burgers are ready. Enjoy your cheeseburgers with toppings and whatever condiments you enjoy and salad on the side!
