Tom Kha Gai Soup

with veggie medley

Active: 30 min | Total:

Tom Kha Gai is a classic coconut-based Thai soup. It's sweet, savory, and tangy all at the same time, but most importantly, it's warming comfort in a bowl.
Smarts: We tried to pack this soup with lots of veggies - feel free to swap in and out whatever you love best.

Comment: "I found this to be too sweet for me and the overall flavors were odd. Also, with the jalapenos it was just too spicy. "

from Emily for the vegetarian version
Comment: "Didn't have baby corn, lemongrass, cilantro, or lime (it was a spur of the moment decision to make!) but it was very good. I added a little more broth (3/4 cup) too just to have it be more soupy. Used the fish sauce with the vegetarian steps. "

from Stephanie for the vegetarian version
Comment: "Made Serving size for 4 and it was enough for 2 generous bowls. Did not use the baby corn or tomatoes due to personal preference. Added the jalapeƱos at the same time as the zucchini. Really enjoyed this soup!!"

from Frances for the original version
Comment: "Amazingly good! I subbed an orange bell pepper for tomatoes and added it in at the same time as the mushrooms. Also added the jalapenos (without seeds) at the same time as the zucchini. Turned out great! Only thing I would do differently is put some of the jalapeno seeds in the soup, since it needed a little more kick. Overall, amazing dish! Can't wait to make it again!"

Comment: "I love Thai food and would definitely up the spices with this one. Next time I would use just a bit more of each of the aromatics. Still good though! "

from Lisa for the vegetarian version
Comment: "I was skeptical as I tasted this soup along the way of preparation, but once the soup was done, with the addition of the cilantro and lime, it is heavenly. I used chicken stock and fish sauce but made the veggie version. "

from Sara for the original version
Comment: "This turned out great. Very easy and it was at least as good as any Tom Kha Gai I've ordered in restaurants. Zucchini is not a veg I typically get excited about but I thought it was really tasty in this-- a nice way to sneak in extra veg. I might try this with shrimp next time."

from Joanna for the original version
Comment: "This was tasty but next time I will cut the zuchini smaller (there were huge slices) and I wasn't sure how to mash the lemon grass so we sliced it and that wasn't ideal. "

from Amanda for the original version
Comment: "This was sooooo good! My store didn't have lemongrass so I bought this savory thai flavor stuff I found in my produce section, it had lemongrass in it so I figured it was close enough. I cannot wait to make this again. "
