Cajun Blackened Tofu Sandwich:
Tofu, extra-firm - 1 lb, sliced into rectangles
(vacuum-packed preferable)
Cajun seasoning - 1 tsp
Green lettuce - 4 leaves
Tomatoes - 1 to 2, sliced
Oil, cooking - 1 1/2 Tbsp
Sandwich buns - 4
Tartar Sauce:
Mayonnaise - 1/2 cup
(sub with Greek yogurt if you prefer. You may need to thin it out with some milk unless you like it thick and creamy!)
Capers - 2 Tbsp
Lemon juice - 1 Tbsp
Cajun Sweet Potato Fries:
Sweet potatoes - 1 1/2 lbs, sliced into fries
Oil, cooking - 1 1/2 Tbsp
Cajun seasoning - 1 tsp
Condiments for dipping (like ketchup) - for serving
Tofu - If tofu is packaged in water, press out liquid first. Slice into rectangles about 1/2” (1.25 cm) thick. Sprinkle both sides with Cajun seasoning and some salt and pepper. (Can be done up 1 day ahead)
Sweet potatoes - Prep as directed. (Can be done up to 3 days ahead)
Make tartar sauce - Mix mayo with capers and lemon juice.
Green lettuce / Tomatoes - Prep as directed.

Toss sweet potatoes with oil and Cajun seasoning and spread into one even layer on a dark sheet pan (for better browning). Roast in the oven for 20 to 30 minutes, until crispy. Shake once midway through.
While sweet potatoes are roasting, heat a skillet or non-stick pan over medium-high heat. Add cooking oil. Once oil is heated, sear tofu in batches for 2 to 3 minutes on each side, until dark and golden.
Toast buns if you want to. Assemble sandwiches with tofu, tartar sauce, lettuce, and tomatoes.
Sprinkle sweet potatoes with salt and pepper immediately out of the oven. Enjoy with ketchup and your tofu sandwiches!
