Spicy Indian Pulled Chicken Salad:
  • Shallots - 1 clove , finely chopped
  • Romaine lettuce - 8 oz , chopped
  • Cucumbers, small - 1 , julienned
  • Tomatoes - 2 , chopped
  • Mint - 2 Tbsp , finely chopped
  • Rice vinegar - 2 Tbsp
  • Dijon mustard - 2 tsp
  • Oil, cooking - 1/4 cup
  • Leftover chicken meat (from Mon) - ~3 cups , shredded or pulled with a fork
  • Cumin - 1 Tbsp
  • Curry powder - 2 tsp
  • Garlic powder - 1 tsp
  • Black pepper - 1 tsp
  • Cashews - 1/2 cup
  • Sriracha or hot sauce (opt) - to taste

Prep

  1. Shallots / Romaine lettuce - Prep as directed. Mix together. (Can be done up to 3 days ahead)
  2. Cucumbers / Tomatoes / Mint - Prep as directed.
  3. Make vinaigrette - Whisk chopped mint with rice vinegar, mustard, and oil. Salt and pepper to taste. (can be done up to 3 days ahead).
  4. Season the chicken - Sprinkle the pulled chicken meat with the cumin, curry powder, garlic powder, and black pepper. (Can be done up to 1 day ahead)
