Chicken and Broccoli Saute with Bacon:
- Red onions - 1/2 , diced
- Broccoli - 1 1/3 lb , chopped
- Bacon - 8 strips , chopped
- Skinless, boneless chicken breasts - 2 , chopped
- Chicken stock - 1/2 cup
- Bragg's / Coconut aminos - 2 Tbsp
- Dijon mustard - 1 1/2 Tbsp
- Red pepper flakes - 1/4 tsp
- Arrowroot powder - 1 Tbsp
- Cooking oil - 1 Tbsp
Prep
- Red onions / Broccoli / Bacon - Prep as directed. (Can be done up to 3 days ahead)
- Chicken breasts - Chop into bite-sized pieces. Season with salt and pepper and tenderize with a fork. (Can be done up to 1 day ahead)
- Make sauce - Mix together chicken stock, aminos, Dijon mustard, red pepper flakes, and arrowroot powder.

Make
- Place broccoli in a microwave-safe container. Cover with a wet paper towel and microwave for 2.5 to 3 minutes, until tender but still crunchy.
- Heat a skillet or saute pan over medium-high heat. Add cooking oil and then bacon and red onions to the heated oil. Saute for ~5 minutes.
- Next add in chicken and saute for another 5 minutes. Pour in the sauce and add broccoli to the pan.
- Wait until the sauce is bubbling and then stir everything together. Cook until the chicken and broccoli are cooked through.
- Season to taste with salt and pepper. Enjoy!
