Chicken and Broccoli Saute with Bacon:
  • Red onions - 1/2 , diced
  • Broccoli - 1 1/3 lb , chopped
  • Bacon - 8 strips , chopped
  • Skinless, boneless chicken breasts - 2 , chopped
  • Chicken stock - 1/2 cup
  • Bragg's / Coconut aminos - 2 Tbsp
  • Dijon mustard - 1 1/2 Tbsp
  • Red pepper flakes - 1/4 tsp
  • Arrowroot powder - 1 Tbsp
  • Cooking oil - 1 Tbsp

Prep

  1. Red onions / Broccoli / Bacon - Prep as directed. (Can be done up to 3 days ahead)
  2. Chicken breasts - Chop into bite-sized pieces. Season with salt and pepper and tenderize with a fork. (Can be done up to 1 day ahead)
  3. Make sauce - Mix together chicken stock, aminos, Dijon mustard, red pepper flakes, and arrowroot powder.

Make

  1. Place broccoli in a microwave-safe container. Cover with a wet paper towel and microwave for 2.5 to 3 minutes, until tender but still crunchy.
  2. Heat a skillet or saute pan over medium-high heat. Add cooking oil and then bacon and red onions to the heated oil. Saute for ~5 minutes.
  3. Next add in chicken and saute for another 5 minutes. Pour in the sauce and add broccoli to the pan.
  4. Wait until the sauce is bubbling and then stir everything together. Cook until the chicken and broccoli are cooked through.
  5. Season to taste with salt and pepper. Enjoy!
