We love marinating chicken in coconut milk for a slight sweetness, but mainly for super tender baked chicken. Bake right in the marinating pan for fewer dishes!

Curried-Coconut Milk Baked Chicken:
  • Garlic - 2 cloves , minced
  • Curry powder - 3/4 tsp
  • Tomato paste - 1 Tbsp
  • Lemon juice - 1 Tbsp
  • Lite coconut milk - 1/2 cup
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Boneless, skinless chicken breasts - 3 , sliced
  • Frozen peas - 1 1/2 cups
  • Lemon - 1/2 , juice of
Indian-Spiced Roasted Cauliflower:
  • Cauliflower - 1 head , chopped
  • Cooking oil - 1 Tbsp
  • Curry powder - 1/2 tsp
  • Turmeric (opt) - 1/2 tsp
  • Salt and pepper - to taste

Prep

  1. Make marinade - Mince garlic. Mix together minced garlic, curry powder, tomato paste, lemon juice, coconut milk, salt, and pepper. (Can be done up to 3 days ahead)
  2. Chicken - Slice into 1” (2.5cm) thick strips and place into a baking dish. Cover in marinade and tenderize with a fork. Marinate for at least 30 minutes and up to 1 day. (Can be done up to 1 day ahead)
  3. Cauliflower - Prep as directed. (Can be done up to 3 days ahead)

Make

  1. You’ll be using both racks in the oven, so get them situated to fit two pans.
  2. Heat oven to 425F (218C) degrees. Toss cauliflower with cooking oil on a sheet pan and roast for 25 minutes. Toss with curry powder and turmeric (if using) in the last 5 minutes of roasting.
  3. Add frozen peas to the marinated chicken and mix. Cover baking dish with foil and cook chicken and peas right in the marinade for 20 to 30 minutes, until chicken reaches 165F (74C) degrees.
  4. Hot out of the oven, sprinkle cauliflower with salt and pepper and squeeze lemon juice over chicken. Enjoy together!
