Caprese Chicken
with garlic-balsamic broccoli
We love caprese salad, so why not combine it with simple grilled chicken to make it something special? This dish makes a great weeknight dinner but will also impress dinner guests if served at a party
Ingredients
- Skinless & boneless chicken breasts - 2
- Broccoli - 1 1/2 lbs, chopped
- Garlic - 2 cloves, minced
- Roma tomato - 1, sliced
- Basil - 2 sprigs, leaves removed
- Fresh mozzarella - 4 oz
- Balsamic vinegar - 2 Tbsp
- Dijon mustard - 2 tsp
- Brown sugar - 2 tsp
- Olive oil - 3 Tbsp

Prep
- Chicken - Slice in half and then season and tenderize with salt & pepper
- Broccoli - Chop into bite-sized pieces
- Garlic / Tomatoes / Basil - Prep as directed
- Mozzarella - Divide into 4 slices

Make
- Preheat oven to 400F (204C) degrees
- Whisk together balsamic vinegar, mustard, brown sugar, and olive oil. Toss half with the broccoli and spread out onto a sheet pan. Sprinkle with salt and roast for 25 minutes, shaking midway
- Heat a grill pan over medium high heat. Brush with some oil and then grill chicken on both sides for about 2 minutes (If grill pan isn't large enough to fit all the chicken pieces, transfer grilled pieces onto a sheet pan). Transfer chicken into the oven and cook for another 8 to 10 minutes in the oven. In the last 2 minutes of cooking, add a slice of mozzarella onto each chicken breast
- When chicken is done, top cheese with a basil leaf and tomato slice. Drizzle with rest of the sauce and enjoy with your crunchy, roasted broccoli

This is I think my fave meal I have made from cooksmarts so far. It was so good! cutting the chicken breasts in half was genius (if not a bit tricky). What really put it over the top was that sauce - SO GOOD. We did not have broccoli so instead we just roasted some onions and sweet potatoes in the oven with oil, salt and pep. Such a good meal!! Would recommend :D
I love caprese so I might be biased towards enjoying this dish. Normally I find chicken breast to be a bit dry, but the moistness of the cheese, tomatoes and sauce meant deliciousness in every bite! I doubled the tomatoes and basil, which was a perfect balance.
This meal was pretty bland.... It could've used a lot more flavor, maybe a marinade for the chicken?
I took one bite of this chicken and said, "oh my god, I can't believe I made this!" It was astoundingly good. The broccoli didn't really do it for me, personally... Broccoli is my favorite veggie and I just found the balsamic-mustard flavor too sweet.
