Balsamic Chicken Kebabs:
  • Red onion (small) - 1/2 , diced
  • Oregano - 1/4 tsp
  • Dijon mustard - 2 tsp
  • Balsamic vinegar - 1 1/2 Tbsp
  • Cooking oil - 3 Tbsp
  • Zucchini - 1 , sliced super thinly
  • Garbanzo beans (14 oz / 397 g can) - 1 can , rinsed and drained
  • Walnuts - 1/3 cup , chopped
  • Feta - 2 oz , crumbled
Orzo Salad:
  • Cherry tomatoes - 1 pint , halved
  • Leftover orzo - 2 cups
  • Arugula - 6 oz

Prep

  1. Red onion - Prep as directed. (Can be done up to 3 days ahead)
  2. Tomatoes - Prep as directed.
  3. Vinaigrette - Whisk together oregano, Dijon, balsamic vinegar, and oil. Season to taste with salt and pepper. (Can be done up to 3 days ahead)
  4. Zucchini - Slice as thinly as possible on a bias. This video shows how to slice, but you’ll want to slice it even thinner.
  5. Chickpeas - Rinse and drain.

  1. Lightly microwave the orzo and chickpeas just to get them a bit warmed up - no more than 45 seconds.
