Ingredients
Balsamic Chicken Kebabs:
- Red onion (small) - 1/2 , diced
- Oregano - 1/4 tsp
- Dijon mustard - 2 tsp
- Balsamic vinegar - 1 1/2 Tbsp
- Cooking oil - 3 Tbsp
- Zucchini - 1 , sliced super thinly
- Garbanzo beans (14 oz / 397 g can) - 1 can , rinsed and drained
- Walnuts - 1/3 cup , chopped
- Feta - 2 oz , crumbled
Orzo Salad:
- Cherry tomatoes - 1 pint , halved
- Leftover orzo - 2 cups
- Arugula - 6 oz
Prep
- Red onion - Prep as directed. (Can be done up to 3 days ahead)
- Tomatoes - Prep as directed.
- Vinaigrette - Whisk together oregano, Dijon, balsamic vinegar, and oil. Season to taste with salt and pepper. (Can be done up to 3 days ahead)
- Zucchini - Slice as thinly as possible on a bias. This video shows how to slice, but you’ll want to slice it even thinner.
- Chickpeas - Rinse and drain.

Make
- Lightly microwave the orzo and chickpeas just to get them a bit warmed up - no more than 45 seconds.
- Toss warmed up orzo and chickpeas with red onions, tomatoes, zucchini, walnuts, and arugula with vinaigrette. Sprinkle on feta if using. Enjoy!
