Turkey Meatball Lettuce Cups

with adobo-honey sauce

Active: 30 min | Total:

We get to reuse last night's adobo-honey sauce drizzled over tonight's lettuce cups (or seitan and corn saute). The crunchiness of the lettuce makes this a summery way to enjoy meatballs.
Smarts: Keep a bowl of water next to you when rolling meatballs. Use it to keep your hands wet, which will prevent the meatballs from sticking to your hands.

Comment: "The meatballs are really good. We didn't eat them with the lettuce cups, just on top of the salad. Also ate leftovers for lunch the next day with quinoa. I love the apple celery salad!"

Comment: "The flavor palette was really delicious, and I loved the tangy salad dressing. I skipped the lettuce wraps because my lettuce head wasn't big enough, so it was just easier to eat with a fork. I gave it a 3 simply because these aren't my absolute favorite meatballs - I love the Mediterranean meatballs better. But definitely still worth making!"

Comment: "This was a huge hit. The meatballs were super flavorful, we loved wrapping them in the lettuce cups, and the honey adobo sauce is just fantastic (added close to a Tbsp of adobo for spice!). "

Comment: "I really liked the cumin in the meatballs. I did feel like the lettuce was unnecessary, might as well just add it to the salad. And as always we doubled the spices."

Comment: "The meatballs were delicious! They really reminded me of my grandmothers meatballs ... and that's a high compliment! The sauce provided a wonderful zesty finish. Another meal in which it is easy and fun to involve kids! I didn't end up doing the salad so I can't speak to that but used the dressing on a more traditional greens and tomatoes and it was great."

Comment: "This was excellent--sort of tasted like tacos! I used a spring-loaded ice cream scoop to make the meatballs and it worked great. No sticky hands and the meatballs were perfectly round!"

Comment: "Loved it!! The meatballs were a hit with everyone. Instead of doing lettuce cups, we just made it all into a salad with iceberg, cucumbers, apples and dressing -- topped with meatballs. My husband is apparently not a fan of vinaigrette at all, because he didn't touch that part of it, but absolutely raved about the turkey meatballs. My honey adobo sauce was really thin -- most likely because I didn't have greek yogurt, just regular plain whole fat yogurt. But it was still delicious. After cooking the meatballs I kind of sauteed/simmered them with about half of the sauce. It created this really creamy spicy coating with a texture similar to swedish meatballs. Then we both poured some more of the thin sauce on top while eating. So tasty! Next time I'll leave the dressing on the side so the husband can enjoy the salad too!"
