BBQ Cheddar Burger with Crispy Onions:
  • Beef, ground - 1 1/2 lbs
  • Worcestershire sauce - 2 tsp
  • Paprika, smoked - 1/2 tsp
  • Salt - 1/2 tsp
  • Garlic powder - 1/4 tsp
  • Black pepper - 1/4 tsp
  • Pickle slices - 1/3 cup (sub pickled jalapeno slices if you'd like some spice)
  • Crispy onion strips - 1/2 cup (look for these with croutons and other salad toppers)
  • Barbecue sauce, bottled - 1/3 cup
  • Cheese, cheddar - 4 slices
  • Hamburger buns - 4
  • Potato chips - 4 oz , for serving
Side Salad with Ranch:
  • Cilantro leaves - 2 Tbsp , finely chopped (sub parsley, chives, dill, or a combination)
  • Mayonnaise - 2 Tbsp
  • Vinegar, white wine - 1 tsp
  • Sour cream - 1/4 cup (sub plain or Greek yogurt)
  • Dill, dried - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Lettuce, romaine - 6 oz , chopped (sub any crisp lettuce variety)
  • Tomatoes, cherry or grape - 1 cup , halved

  1. Make ranch dressing: Chop cilantro. Whisk together cilantro, mayonnaise, vinegar, sour cream, dill, and garlic powder (portion for salad) until well-combined. Taste and season with some salt and pepper. (Can be done up to 5 days ahead)

  2. Make burger patties - In a large bowl, combine ground beef, Worcestershire sauce, paprika, salt, garlic powder (portion for burgers), and pepper. Mix gently with hands until combined. Form mixture into patties, one per serving. (Can be done 1 day ahead)

  3. Lettuce / Tomatoes - Prep as directed.

  1.  Heat grill to 450F / 232C. Clean the grates and brush with some cooking oil.

  2. While grill heats, toss lettuce and tomatoes together in a serving bowl. Set out pickle slices, crispy onion strips, and barbecue sauce.

  3. Place burger patties on the grill and cook on one side until grill marks appear, 2 to 3 minutes. Flip burgers and continue cooking until cooked to your liking - 2 to 3 minutes more for medium-rare, 3 to 4 minutes more for medium, 5 to 6 minutes more for well-done. When burgers are nearly done, top with cheese slices.
