Smoked Salmon Board:
  • Smoked salmon - 1 lb , thinly sliced or separated into chunks with a fork
  • Lemons - 1 , wedges
  • Capers - 1 Tbsp , drained and rinsed
  • Lettuce, butterhead - 1 head , leaves separated (sub any leafy variety)
  • Green onions - 1 stalk , thinly sliced; green and white parts combined
  • Cucumbers - 8 oz , thinly sliced
  • Tomatoes, medium - 1 , sliced into thin wedges
  • Oil, olive - 2 tsp
  • Lemon juice - 2 tsp
  • Crackers, any paleo-friendly such as almond flour crackers - 8 oz (sub lettuce leaves)
  • Strawberries, fresh - 16 oz (sub grapes or orange slices)

Prep

  1. Smoked salmon / Lemons / Capers - Prep as directed and store separately. (Can be done up to 5 days ahead)

  2. Lettuce / Green onions / Cucumbers / Tomatoes - Prep as directed.

  1. In a medium bowl, combine smoked salmon with green onions, capers, olive oil, and lemon juice. Mix with a fork until just combined.

  2. Set out a large board, serving platter, or sheet pan. Place the bowl of smoked salmon on the platter along with cucumber slices, tomatoes, lettuce leaves, crackers (if using), and strawberries.
