Make pimento cheese - In a large mixing bowl, soften cream cheese (portion for pimento cheese) briefly in the microwave so that it’s easy to mix with a spoon, ~20 seconds. Add cheddar cheese, pimientos, mayonnaise, garlic powder, onion powder, and red pepper flakes (if using). Mix well with a sturdy spatula or spoon until well-combined. Taste and season with some salt and pepper, if needed. Store in an airtight container. (Can be done up to 5 days ahead)
Prepare cream cheese - Chop green onions. Soften cream cheese (portion for sandwiches) briefly in the microwave so that it’s easy to mix with a spoon, ~20 seconds. Fold green onions into cream cheese until thoroughly combined. Store in an airtight container. (Can be done up to 5 days ahead)

Make pimento cheese sandwiches: Spread first portion of bread slices lightly with pimento cheese. Top half of these bread slices with tomatoes and place remaining bread (with the pimento cheese) on top.
Make smoked salmon sandwiches: Spread second portion of bread slices lightly with green onion / cream cheese mixture. Make a thin layer of cucumber slices on half of these bread slices and top with smoked salmon. Place remaining bread slices (with the cream cheese) on top.
Using a large knife, slice the crusts off the sandwiches (optional, for a traditional “tea sandwich” presentation), then cut the sandwiches into small shapes. Small squares, triangles, or rectangular “fingers” all work well.
Set out a large board, serving platter, or sheet pan. Arrange the small sandwiches on the platter along with snap peas and strawberries (you can also include extra cucumbers or orange slices if you have them). If you have any extra pimento cheese or green onion cream cheese, add them to the board for dipping the vegetables.
