- Cucumbers, English or Persian - 1/2 lb , cubed
- Mint - 2 sprigs , chopped
- Sundried tomatoes - 1/4 cup , chopped
- Artichoke hearts - 1 can , quartered
- Romaine hearts - 1
- Plain yogurt - 2 cups
- Lemon - 1/2 , juice of
- Hummus (8 to 10 oz) - 1 container
- Baby carrots - 1/2 lb
Prep
- Rotisserie chicken - Peel meat off of bone and chop into bite sized pieces
- Cucumbers / Mint / Sundried tomatoes / Artichoke hearts - Prep as directed
- Romaine hearts - Peel off leaves to use in place of sandwich bread
