This meal was inspired by an old cooking lesson student of mine. She was a mom of two that asked me to come up with ideas for the quickest meal possible. This is definitely more of an "assembly" meal than a cooking meal, but there are some nights where we need that kind of convenience
Make tzatziki by mixing yogurt with cucumber and mint. Add in a squeeze of lemon juice
Spread everything out and let everyone make their own plate - top flatbread with hummus, sundried tomatoes, & chicken, dip carrots into tzatziki or hummus, enjoy tzatziki on its own
