with hummus and mint & cucumber tzatziki
Ingredients
- Rotisserie chicken - 1/2
- Cucumbers, English or Persian - 1/2 lb, cubed
- Mint - 2 sprigs, chopped
- Sundried tomatoes - 1/4 cup, chopped
- Flat breads (like pita) - 4
- Plain yogurt - 2 cups
- Lemon - 1/2, juice of
- Hummus (8 to 10 oz) - 1 container
- Baby carrots - 1/2 lb

Make
- Heat up flat breads in the oven or toaster
- Make tzatziki by mixing yogurt with cucumber and mint. Add in a squeeze of lemon juice
- Spread everything out and let everyone make their own plate - top flatbread with hummus, sundried tomatoes, & chicken, dip carrots into tzatziki or hummus, enjoy tzatziki on its own

Super quick and a good combo of flavors! We also cut up some leftover cheese (fontina) from the Mediterranean turkey burgers earlier this week. Next time I would cut the tzatziki amount in half -- seemed like too much compared to the rest of the plates.
Absolutely loved this. The only change I made was that I roasted my own chicken. The perfect light dinner for a summer evening.

Love hummus so much. Would love to see a recipe for making hummus on prep day. First time with tzatziki and I liked it, but will chop cucumber smaller next time. yum!
