with hummus and mint & cucumber tzatziki

This meal was inspired by an old cooking lesson student of mine. She was a mom of two that asked me to come up with ideas for the quickest meal possible. This is definitely more of an "assembly" meal than a cooking meal, but there are some nights where we need that kind of convenience

Mediterranean Plate:
  • Rotisserie chicken - 1/2
  • Cucumbers, English or Persian - 1/2 lb , cubed
  • Mint - 2 sprigs , chopped
  • Sundried tomatoes - 1/4 cup , chopped
  • Flat breads (like pita) - 4
  • Plain yogurt - 2 cups
  • Lemon - 1/2 , juice of
  • Hummus (8 to 10 oz) - 1 container
  • Baby carrots - 1/2 lb

Prep

  1. Rotisserie chicken - Peel meat off of bone and chop into bite sized pieces
  2. Cucumbers / Mint / Sundried tomatoes - Prep as directed

  1. Heat up flat breads in the oven or toaster
  2. Make tzatziki by mixing yogurt with cucumber and mint. Add in a squeeze of lemon juice
  3. Spread everything out and let everyone make their own plate - top flatbread with hummus, sundried tomatoes, & chicken, dip carrots into tzatziki or hummus, enjoy tzatziki on its own
