We love keeping smoked salmon on hand for quick meals. It requires no cooking (and almost no prep), keeps for a long time in the freezer, and always feels like a special treat. In this case, it also proves that a sandwich never needs to be boring!

Herbed Goat Cheese:
  • Green onions - 1 stalk , thinly sliced, green and white parts combined
  • Goat cheese - 4 oz (sub cream cheese)
  • Dill, dried - 1/2 tsp
Smoked Salmon Focaccia Sandwich:
  • Bell peppers, from a jar of roasted red peppers - 1/2 cup , drained and sliced (look for pre-sliced to save time)
  • Peppers, jarred pepperoncini (opt) - 1/3 cup , drained and sliced (look for pre-sliced to save time)
  • Cucumbers - 8 oz , thinly sliced
  • Smoked salmon - 8 oz
  • Bread, gluten-free focaccia - 1 lb , sliced (use 1 large loaf cut into quarters (for 4 servings) or 1 individual roll per serving; sub any gluten-free bread or rolls)
  • Oil, olive - 2 Tbsp
  • Lemon juice - 2 Tbsp
  • Arugula - 5 oz
  • Potato chips, salt and vinegar - 4 cups , for serving (sub any chips)

Prep

  1. Make herbed goat cheese - Slice green onions. Place goat cheese in a medium bowl and soften briefly in the microwave (15 to 20 seconds). Fold in green onions and dill. (Can be done up to 5 days ahead)

  2. Bell peppers / Pepperoncini - Prep as directed and store separately. (Can be done up to 5 days ahead)

  3. Cucumbers - Prep as directed. (Can be done 1 day ahead)

  4. Salmon - Slice the salmon into pieces or separate into chunks with a fork (skip this step if your salmon is pre-sliced). (Can be done 1 day ahead)

  5. Focaccia - Slice focaccia if not already sliced.

  1. If herbed goat cheese was made ahead of time, soften it briefly in the microwave until just spreadable (~15 to 20 seconds).

  2. In a serving or mixing bowl, whisk together olive oil and lemon juice. Add arugula and toss to combine. Season with a bit of coarse salt and freshly ground pepper, if you like.

  3. If you’d like the focaccia warm, toast or warm it briefly in the microwave, toaster, or oven.

  4. Spread goat cheese on the bottom halves of focaccia. Spread cucumber slices on top of goat cheese, then top with salmon, roasted peppers, pepperoncini (if using), and some dressed arugula. Place top halves of focaccia on top.

  5. Serve sandwiches with potato chips. Enjoy with remaining arugula on the side.
