Prep
Cheese / Garlic / Onions / Pickles - Shred first portion of cheese. Prep garlic (for dressing and burgers), onions, and pickles as directed. Store everything separately. (Can be done up to 5 days ahead)
Make dressing - Combine garlic (portion for dressing), mayonnaise, ketchup, pickle relish, lemon juice, and paprika (portion for dressing). Season with some salt and pepper. (Can be done up to 5 days ahead)
Make black bean patties - Drain and rinse the beans. Mash the beans with a potato masher or fork. Add garlic (portion for burgers), eggs, panko, onion powder, smoked paprika (portion for burgers), salt, pepper, and shredded cheese (save the slices for topping the patties). Mix with a fork or your hands until evenly combined. Form into small patties, 2 per serving, and place on a plate lined with parchment or waxed paper. Cover with plastic wrap and refrigerate for 10-20 minutes before cooking or up to 1 day. (Can be done 1 day ahead)
Set out onions, pickles, lettuce, tomatoes, dressing, and baby carrots while the pan heats. If dressing was made ahead of time, give it a stir.
Once the pan is hot, add bean patties to the pan (you may need to cook just one or two at a time, depending on the size of your pan). Press each patty firmly with a sturdy spatula or burger press until they are very thin.
Sear patties on one side for ~2 minutes, then flip them over. Top each patty with a cheese slice and then a tortilla. Continue to cook, tortilla side up, for another 2-3 minutes or until browned and cooked through.
Carefully flip the burgers once more, and cook with the tortilla side down until the tortillas are warm and lightly golden, ~30 to 60 seconds (watch them carefully to prevent burning). Repeat until all burgers are cooked.
Top burgers with onions, pickles, lettuce, tomatoes, and a drizzle of dressing, then fold into a taco shape.
Serve smashburger tacos with baby carrots on the side, along with remaining dressing for dipping. Enjoy!
