Mushroom Swiss Burger:
  • Mayonnaise - 3 Tbsp
  • Mustard, Dijon - 2 tsp
  • Lemon juice - 1 tsp
  • Mushrooms, any button - 1 lb , sliced (look for pre-sliced to save time)
  • Beef, ground and lean - 1 1/4 lbs
  • Worcestershire sauce - 2 tsp
  • Salt - 3/4 tsp
  • Garlic powder - 1/2 tsp
  • Black pepper - 1/2 tsp
  • Oil, cooking - 1 Tbsp
  • Cheese, Swiss - 4 slices (sub another type of cheese)
  • Hamburger buns - 4
  • Veggie chips, store-bought - 4 cups (sub any type of chips)
Fruit Salad:
  • Fresh mixed fruit - ~3 cups , chopped, if needed (like berries, peaches, melon, or pineapple)
  • Mint, fresh - 2 tsp , chopped
  • Lime juice - 1 Tbsp
  • Honey - 1 Tbsp

Prep

  1. Make burger dressing - (If prepping right before cooking, get grill heating first.) Whisk together mayonnaise, mustard, and lemon juice. (Can be done up to 5 days ahead)

  2. Mushrooms - Prep as directed. (Can be done up to 3 days ahead)

  3. Make burger patties - In a large bowl, combine ground beef, Worcestershire sauce, salt, garlic powder, and pepper. Mix with hands just until combined (be careful not to overmix). Form into 1” / 2.5 cm thick patties and make a depression in the center with your thumb (this will help the patties to retain an even thickness as they cook). (Can be done 1 day ahead)

  4. Fruit / Mint - Prep as directed.

  5. Make salad - Whisk together lime juice and honey in a serving or mixing bowl. Add fruit and mint and toss gently to combine everything together. Taste and add more lime juice or honey as needed.

  1. Heat grill to 450F / 232C. Clean the grates and brush with some cooking oil.

  2. While the grill heats, place a large skillet over medium heat and add cooking oil. Add mushrooms to heated oil with a pinch of salt. Saute until mushrooms are tender and liquid has evaporated, 6 to 7 minutes. Season to taste with some more salt and pepper, if needed. (If you’d like, you can also grill the mushrooms in a grill basket at the same time as the burgers.) Transfer to a bowl and cover to keep warm.

  3. Place burger patties on the grill and cook on one side until grill marks appear, 2 to 3 minutes. Flip burgers and continue cooking until cooked to your liking - 2 to 3 minutes more for medium-rare, 3 to 4 minutes more for medium, 5 to 6 minutes more for well-done. When burgers are nearly done, top with cheese slices.

  4. Toast hamburger buns, if you’d like.

  5. Spread buns with burger dressing. Place burgers on buns and top with sauteed mushrooms.

  6. Serve burgers with fruit salad and veggie chips on the side. Enjoy!
