This no-cook meal is fast and easy thanks to leftover rotisserie chicken from earlier in the week. Since it's all assembly, you can take it on the go or let everyone eat when they're ready, making it perfect for busy weeknights.
Rotisserie chicken - (Skip if done ahead for Monday.) Remove meat from the bones and shred or chop. (Can be done up to 5 days ahead)
Make dressing - Whisk together paprika, oregano, garlic powder, vinegar, mustard, and honey. Slowly drizzle in olive oil while whisking. Taste and season with some salt and pepper, if needed. (Can be done 5 days ahead)
If you'd like the chicken warm, heat it briefly in the microwave. Toss the chicken with half of the dressing.
Combine romaine, tomatoes, cucumber, and mint in a serving or mixing bowl. Toss with remaining dressing until it is dressed to your liking.
To assemble, spread hummus onto flatbread and then fill with rotisserie chicken and salad. Roll up the wraps, tucking in the ends as you go (or stuff the components into pita pockets, if you prefer).
Serve wraps with any leftover Greek salad on the side. Enjoy!
