Prep
Garlic / Ginger / Carrots / Snow peas - Prep as directed. Store garlic and ginger together in one container. Store carrots and snow peas together in another container. (Can be done up to 5 days ahead)
Green onions - Prep as directed. Store white and green parts separately. (Can be done up to 3 days ahead)
Steak - Slice steak and season with some salt and pepper. (Can be done 1 day ahead)
Make sauce - Whisk together stock, aminos, vinegar, honey, chili-garlic sauce, and sesame oil.

Heat a wok or large skillet over medium-high heat and add first portion of cooking oil.
Add carrots and snow peas to heated oil with a pinch of salt. Stir fry until crisp-tender and browned in spots, 3 to 5 minutes. Transfer to a bowl and set aside.
Return wok to heat and add second portion of cooking oil. Add garlic, ginger, and white parts of green onions to heated oil and stir fry until fragrant, 1 to 2 minutes. Add steak and sear until browned on both sides and nearly cooked through, 2 to 3 minutes.
Give the sauce a stir. Push steak to the sides of the wok, forming a well in the middle. Slowly pour the sauce into the center of the wok and let it cook, undisturbed, until it begins to simmer.
Whisk together arrowroot powder and water and add it to the sauce in the center of the wok.
Toss steak and sauce together and continue to cook until the sauce has thickened and steak is cooked through.
Fold in carrots, snow peas, and green parts of green onions. Season to taste with some salt and pepper.
Serve beef and vegetables topped with sesame seeds. Enjoy!
