Hoisin Beef and Snow Peas
with rice
This flavorful stir fry comes together in a snap. A quick sear in a hot pan keeps the steak tender and the vegetables bright and crisp.
Ingredients
- Rice, uncooked white or brown - 1 cup
- Garlic - 3 cloves , chopped
- Peas, snow or snap - 12 oz , sliced diagonally into 1/2" / 1.3 cm pieces
- Green onions - 4 stalks , chopped, green and white parts separate
- Steak, sirloin or flank - 1 lb , sliced into thin strips
- Stock, any type - 1/2 cup
- Hoisin sauce - 1/3 cup
- Soy sauce, low-sodium - 1 Tbsp
- Vinegar, rice - 2 tsp
- Oil, toasted sesame - 1 tsp
- Red pepper flakes (opt) - 1/4 tsp
- Cornstarch - 1 Tbsp
- Oil, cooking - 1 Tbsp + 1 Tbsp
- Sesame seeds, white - 2 Tbsp

Rice - For white rice, rinse until clear. Fill a saucepan or Dutch oven (or rice cooker) with rice, water (use 2:1 ratio for water to rice), and some salt. Cover with lid and bring to a boil. Once water boils, stir, lower heat to a low-medium, and cover. Check white rice after ~20 min; brown at ~45 min. Rice is done when it's absorbed all the water. If it's not done, leave the cover on until all water has been absorbed. Take cover off to release steam and fluff with a wooden spoon after 5 minutes. (Can be done up to 5 days ahead)

Garlic / Snow peas - Prep as directed and store separately. (Can be done up to 5 days ahead)

Green onions - Prep as directed. Store white and green parts separately. (Can be done up to 3 days ahead)

Steak - Slice steak and season with some salt and pepper. (Can be done 1 day ahead)

Make sauce - Whisk together stock, hoisin sauce, soy sauce, vinegar, sesame oil, red pepper flakes (if using), and cornstarch.

Heat a wok or large skillet over medium-high heat and add first portion of cooking oil.

Add snow peas to heated oil with a pinch of salt and stir fry until crisp-tender and browned in spots, 2 to 4 minutes. Transfer to a bowl and set aside.

Return wok to heat and add second portion of cooking oil. Add garlic and white parts of green onions to heated oil and stir fry until fragrant, 1 to 2 minutes. Add steak and sear until browned on both sides and nearly cooked through, 2 to 3 minutes.

Give the sauce a stir. Push steak to the sides of the wok, forming a well in the middle. Slowly pour the sauce into the center of the wok and let it cook, undisturbed, until it begins to simmer.

Toss steak and sauce together and continue to cook until the sauce has thickened and steak is cooked through.

Fold in snow peas and green parts of green onions. Season to taste with some salt and pepper.

If rice was made ahead, warm it in the microwave.

Serve beef and snow peas over rice and top with sesame seeds. Enjoy!
