Combo fajitas are a restaurant favorite, but they're easy and fast to make at home on a sheet pan. Put this crowd-pleaser into your Taco Tuesday rotation! Smarts: We love the quick-cooking mix of chicken and shrimp, but feel free to use just one type of protein if you prefer.
Chicken tenderloin strips
- 3/4 lb

(sub boneless, skinless chicken breasts sliced into strips)
Lettuce, romaine

Avocados

- 1 Tbsp + 1 Tbsp
Lime juice

Tortillas, fajita-sized corn or flour

Prep
Shrimp - Defrost if frozen and pat dry. (Can be done 1 day ahead)
Make seasoning mix - (If prepping right before cooking, get oven heating first.) Combine chili powder, cumin, salt, paprika, oregano, garlic powder, and pepper. Store in an airtight container. (Can be done up to 5 days ahead)
Onions / Bell peppers / Garlic - Prep as directed and combine. (Can be done up to 5 days ahead)
Chicken - Slice chicken tenderloins into thirds (or slice into thin strips if using chicken breasts) and toss with half of the seasoning mix. (Can be done 1 day ahead)
Shrimp - Toss shrimp with half of the seasoning mix.
Heat the oven’s broiler and line a large baking sheet with foil.
Spread onions, peppers, garlic, and chicken over the baking sheet. Drizzle with first portion of cooking oil and toss everything together to combine.
Place pan in the oven and broil until chicken is cooked through and vegetables are nearly tender, ~5 to 7 minutes.
Remove pan from the oven and add shrimp (if it won’t all fit comfortably, or if you’d like to keep the shrimp separate, use two pans). Toss shrimp with second portion of cooking oil. Return to the oven and continue to broil until shrimp is opaque and cooked through, 2 to 3 minutes more. Sprinkle lime juice over everything.
Warm tortillas according to package directions.
Set out lettuce, avocados, tomatoes, sour cream, and hot sauce (if using).
