Radish and Romaine Salad:
  • Cilantro - 1 Tbsp , chopped
  • Radishes - 1/2 lb , sliced
  • Cucumbers - 1/2 lb , chopped
  • Romaine lettuce - 1/2 head , chopped

  • Honey - 1 tsp

Taco Pasta:
  • Turkey, ground and lean - 2 1/4 lbs
  • Salt - 1 tsp
  • Cumin, ground - 2 tsp
  • Garlic powder - 1 tsp
  • Coriander, ground - 1 tsp
  • Paprika - 1 tsp
  • Cilantro - 1/4 bunch , chopped
  • Garlic - 4 cloves , minced
  • Onions, medium - 1 , diced
  • Sweet potatoes - 1 lb , spiralized into noodles
  • Tomatoes, cherry - 1/2 pt , halved
  • Avocado - 1 , cubed
  • Oil, cooking - 1 Tbsp + 1 Tbsp
  • Tomatoes, crushed - 1 cup
  • Limes - 1/2 , juice of

Prep

  1. Ground turkey - This makes enough for tomorrow’s dinner. Season ground turkey with salt, cumin, garlic powder, coriander, and paprika. (Can be done up to 1 day ahead)
  2. Cilantro (for pasta and vinaigrette) / Garlic / Onions - Prep as directed. (Can be done up to 3 days ahead)
  3. Sweet potatoes - Prep as directed. If you don’t own a spiralizer, you can grate in a food processor (watch this carrot video as an example) or use a peeler (watch this zucchini video as an example). (Can be done up to 3 days ahead)
  4. Tomatoes / Avocado - Prep as directed.
  5. Radishes / Cucumbers / Romaine lettuce - Prep if not prepped from last night.

Make

  1. Heat a skillet over medium-high heat. Add in first part of cooking oil and then sweet potato ‘noodles’ with water and a sprinkle of salt. Saute for 5 to 7 minutes until the noodles are tender but still a bit crunch. Once you get to your preferred texture, remove and set aside.
  2. Return skillet to heat and add in second part of cooking oil with garlic and onions. Once you can smell the garlic, add in ground turkey, breaking up meat with a wooden spoon. Saute until broken into smaller pieces, 4 to 6 minutes. Add in crushed tomatoes and cook for another 3 to 5 minutes until meat gets cooked through.
  3. Set aside 1/2 of the meat for tomorrow's meal. Mix sweet potato noodles to tonight's portion of the taco meat.
  4. Divide sweet potato pasta into bowls and top with tomatoes, avocado, and cilantro. Finish with a squeeze of lime juice.
  5. Make vinaigrette if not made from last night. Whisk together cilantro, Dijon, red wine vinegar, and oil. Season to taste with salt and pepper. Toss vinaigrette with radishes, cucumbers, and lettuce. Enjoy with sweet potato pasta.
