Garlic-Roasted Broccoli:
  • Broccoli - 1 lb , florets
  • Garlic - 2 cloves , chopped
  • Oil, cooking - 1 Tbsp
"Chicken-less" Parmesan Sandwiches:
  • Cheese, provolone - 6 oz , sliced or shredded (sub mozzarella)
  • Cheese, parmesan - 2 oz , grated
  • Sandwich buns - 4
  • Plant-based chick*n patties or fillets - 4 (sub tenders)
  • Marinara sauce - 1 cup , plus more for serving (use your favorite store-bought)

Make

  1. Heat oven according to package directions for your brand of plant-based chick*n and set out two baking sheets.

  2. Spread plant-based chick*n out on the first baking sheet and bake according to package directions.

  3. While chick*n cooks, toss broccoli with garlic and cooking oil and season with some salt and pepper. Spread broccoli out on the second baking sheet and transfer to the oven. Roast the broccoli until tender and beginning to brown in places, 15 to 18 minutes (based on oven temperature of 425 F / 218 C; adjust cook time for broccoli if baking temperature for your chick*n pieces is different).

  4. Toast the sandwich buns, if you'd like.

  5. Warm marinara sauce in the microwave.

  6. Remove the chick*n from the oven and top each piece with provolone and Parmesan. Return to the oven and bake until cheese is melted, about 1 to 2 minutes more.

  7. Fill sandwich buns with chick*n pieces. Spoon as much marinara sauce as you’d like over the chick*n, then finish with bun tops.

  8. Serve sandwiches with roasted broccoli on the side and extra marinara for dipping. Enjoy!
