Pad See Ew Sauce:
  • Soy sauce, low-sodium - 2 Tbsp
  • Water - 2 Tbsp
  • Vinegar, rice - 2 tsp
  • Brown sugar - 2 tsp
  • Black pepper - 1/4 tsp
  • Cornstarch - 2 tsp
Pad See Ew:
  • Tofu, extra-firm - 16 oz , 1/2" / 1.3 cm cubes (vacuum-packed preferable)
  • Broccolini - 1 bunch , chopped into 2" / 5 cm pieces (sub broccoli, bok choy, or spinach)
  • Garlic - 3 cloves , chopped
  • Noodles, rice - 8 oz (use a wide type)
  • Eggs - 2 , whisked
  • Cilantro - 2 Tbsp , chopped
  • Oil, cooking - 1 Tbsp + 1 Tbsp
  • Hot sauce (opt) - for serving

Prep

  1. Tofu - If tofu is packaged in water, press out liquid first, like in this video. Then slice into 1/2” / 1.3 cm thick cubes. (Can be done 1 day ahead)

  2. Broccolini / Garlic - Prep as directed and store separately. (Can be done up to 5 days ahead)

  3. Make sauce - Whisk together soy sauce, water, vinegar, brown sugar, pepper, and cornstarch. (Can be done up to 5 days ahead)

  4. Noodles - Cook or soak noodles according to package directions, being careful not to overcook. Drain and cool completely. (If prepping ahead, toss noodles with some cooking oil to help prevent sticking.) (Can be done 1 day ahead)

  5. Eggs - Whisk eggs.

  6. Cilantro - Prep as directed.

Make

  1. Heat a wok or nonstick skillet over medium-high heat with first portion of cooking oil. Add tofu and let cook, without stirring, until golden brown on one side. Once one side is golden brown, flip tofu every couple minutes until evenly golden brown, cooking tofu for about 8 minutes total. Move tofu to one side of the pan and pour eggs into the other side. Scramble eggs until just set. Transfer tofu and eggs to a serving or mixing bowl and return pan to heat.

  2. Add second portion of cooking oil and then add garlic to heated oil. Stir fry garlic until fragrant, ~30 seconds.

  3. Add broccolini to the pan and stir fry until crisp-tender, 3 to 4 minutes more. Transfer broccolini to the bowl with the tofu and eggs and return pan to the stove.

  4. Add noodles and sauce to the pan and quickly toss to combine. Cook, tossing the noodles gently, for 2 to 3 minutes until noodles are completely coated with sauce and lightly caramelized. Remove pan from heat.

  5. Return tofu, broccolini, and eggs to the pan and gently toss everything together.

  6. Divide Pad See Ew among serving bowls and top with cilantro and hot sauce (if using). Enjoy!
