Thai Chicken and Egg Stir Fry
with zucchini noodles / broccolini
Spiralized zucchini stands in for rice noodles in this savory Thai stir fry. Chicken, scrambled eggs, and crisp-tender broccolini make it filling and delicious.
Ingredients
- Bragg's / coconut aminos - 2 Tbsp
- Water - 2 Tbsp
- Vinegar, rice - 2 tsp
- Honey - 2 tsp
- Black pepper - 1/4 tsp
- Arrowroot powder - 1 tsp
- Broccolini - 1 bunch , chopped into 2" / 5 cm pieces (sub broccoli, bok choy, or spinach)
- Garlic - 3 cloves , chopped
- Chicken breasts, boneless and skinless - 1 lb , thinly sliced
- Zucchini - 12 oz , spiralized, sliced into strips with a peeler, or cubed
- Eggs - 2 , whisked
- Cilantro - 2 Tbsp , chopped
- Oil, cooking - 1 Tbsp + 1 Tbsp
- Hot sauce (opt) - for serving

Broccolini / Garlic - Prep as directed and store separately. (Can be done up to 5 days ahead)

Make sauce - Whisk together aminos, water, vinegar, honey, pepper, and arrowroot powder. (Can be done up to 5 days ahead)

Chicken - Thinly slice the chicken. Season with some salt and pepper and tenderize with a fork. (Can be done 1 day ahead)

Zucchini - Turn zucchini into 'noodles' with a spiralizer or peel off strips with a peeler. (Note: If you prefer, you can also just cube zucchini.) (Can be done 1 day ahead)

Eggs - Whisk eggs.

Cilantro - Prep as directed.

Make

Heat a wok or nonstick skillet over medium heat with first portion of cooking oil. Add eggs to heated pan and scramble until soft-set. Transfer eggs to a serving or mixing bowl, wipe out the pan if needed, and return it to the heat.

Add second portion of cooking oil and then add garlic to heated oil. Stir fry garlic until fragrant, ~30 seconds.

Increase heat to medium-high and add chicken. Stir fry until chicken is browned on the outside but not cooked through.

Add broccolini to the pan and continue to cook until chicken is cooked through and broccolini is crisp-tender, 3 to 4 minutes more. If using cubed zucchini add it at the same time (if using zucchini noodles, wait to add them).

Add zucchini noodles and sauce to the pan and toss to combine. Stir fry for 2 to 3 minutes until zucchini noodles are tender and sauce is lightly caramelized. Remove pan from heat and stir eggs into stir fry.

Divide stir fry among serving bowls and top with cilantro and hot sauce (if using). Enjoy!
