Pad See Ew Sauce:
  • Soy sauce, low-sodium - 2 Tbsp
  • Oyster sauce - 2 Tbsp
  • Vinegar, rice - 2 tsp
  • Brown sugar - 2 tsp
  • Black pepper - 1/4 tsp
Pad See Ew:
  • Broccolini - 1 bunch , chopped into 2" / 5 cm pieces (sub broccoli, bok choy, or spinach)
  • Garlic - 3 cloves , chopped
  • Noodles, rice - 8 oz (use a wide type)
  • Chicken breasts, boneless and skinless - 1 lb , thinly sliced
  • Eggs - 2 , whisked
  • Cilantro - 2 Tbsp , chopped
  • Oil, cooking - 1 Tbsp + 1 Tbsp
  • Hot sauce (opt) - for serving

Prep

  1. Broccolini / Garlic - Prep as directed and store separately. (Can be done up to 5 days ahead)

  2. Make sauce - Whisk together soy sauce, oyster sauce, vinegar, brown sugar, and pepper. (Can be done up to 5 days ahead)

  3. Noodles - Cook or soak noodles according to package directions, being careful not to overcook. Drain and cool completely. (If prepping ahead, toss noodles with some cooking oil to help prevent sticking.) (Can be done 1 day ahead)

  4. Chicken - Thinly slice the chicken. Season with some salt and pepper and tenderize with a fork. (Can be done 1 day ahead)

  5. Eggs - Whisk eggs.

  6. Cilantro - Prep as directed.

Make

  1. Heat a wok or nonstick skillet over medium heat with first portion of cooking oil. Add eggs to heated pan and scramble until soft-set. Transfer eggs to a serving or mixing bowl, wipe out the pan if needed, and return it to the heat.

  2. Add second portion of cooking oil and then add garlic to heated oil. Stir fry garlic until fragrant, ~30 seconds.

  3. Increase heat to medium-high and add chicken. Stir fry until chicken is browned on the outside but not cooked through.

  4. Add broccolini to the pan and continue to cook until chicken is cooked through and broccolini is crisp-tender, 3 to 4 minutes more.

  5. Transfer chicken and broccolini to the bowl with the eggs and return pan to the stove.

  6. Add noodles and sauce to the pan and quickly toss to combine. Cook, tossing the noodles gently, for 2 to 3 minutes until noodles are completely coated with sauce and lightly caramelized. Remove pan from heat.

  7. Return chicken, broccolini, and eggs to the pan and gently toss everything together.

  8. Divide Pad See Ew among serving bowls and top with cilantro and hot sauce (if using). Enjoy!
