We don’t need to tell you how to make a grilled cheese sandwich, but this version stands apart for being easy to make and so much fun to eat. Make these as plain or fancy as you like and serve them up anytime you need a crowd pleaser! Smarts: Feel free to swap other kebab fillings for the tomatoes or add extras. Apples, olives, or chunks of deli meat are all great options. You can also opt to skip the skewers, if you like.
Bread, sourdough
- 8 slices
(sub any sandwich bread)
Cheese, cheddar
- 8 oz
(sliced, sub any type of cheese or use a combination such as cheddar and provolone)
Tomatoes, cherry or grape
- 1 cup
Skewers, metal or bamboo
- 4 to 8
Spinach Salad with Grapes:
Almonds, sliced or slivered
- 1/4 cup
Vinegar, red wine
- 2 Tbsp
Mustard, Dijon
- 1 tsp
Maple syrup
- 1 tsp
Oil, olive
- 3 Tbsp
Grapes, any color
- 1 cup

Baby spinach
- 5 oz
Prep
Toast almonds - (If prepping right before cooking, get oven heating first.) Place a small, nonstick skillet over medium-low heat and add almonds. Toast almonds until lightly browned, stirring frequently to prevent burning. Store in an airtight container. (Can be done up to 5 days ahead)
Make vinaigrette - Whisk together vinegar, mustard, and maple syrup. Slowly add olive oil while whisking. Taste and season with some salt and pepper, if needed. (Can be done up to 5 days ahead)
Grapes - Prep as directed.

Heat oven to 425F / 218C degrees and line a baking sheet with parchment paper.
Soften butter briefly in the microwave if needed (~10 to 20 seconds). Spread butter on one side of each bread slice.
Lay half of the bread slices on the baking sheet, buttered side-down (use two baking sheets if necessary to prevent crowding). Top each slice with cheese and place remaining bread slices on top, buttered side-up.
Transfer baking sheet to the oven and bake for 5 to 6 minutes, or until the bottoms of the sandwiches are golden and crispy.
Carefully flip the sandwiches and return them to the oven. Bake until both sides are lightly browned and cheese is melted, ~5 minutes more. Let sandwiches cool for 1-2 minutes before slicing.
While sandwiches bake, place spinach, almonds, and grapes in a serving or mixing bowl. Add dressing and toss until salad is dressed to your liking.
Slice sandwiches into quarters (or smaller, if your bread is on the larger side). Alternate threading sandwich pieces and tomatoes onto skewers.
Serve grilled cheese kebabs with salad on the side. If you have extra vinaigrette, use it for dipping the tomatoes, if you’d like. Enjoy!
