Black Bean Burger Sliders
with crinkle-cut fries / sauteed snap peas
Mini black bean burgers are a fun meal anytime. We've made the cooking more hands-off by baking them all at once on a sheet pan, so make as many as you like!
Smarts: The temperature and time listed is based on store-bought crinkle-cut fries. If your fries are different, adjust cook times accordingly.
Ingredients
- Cheese, cheddar - 4 oz , shredded (sub American cheese)
- Onions, medium - 1/2 , minced
- Beans, black (14 oz / 397 g) - 2 cans , drained and rinsed
- Panko breadcrumbs - 1/2 cup
- Flour, all-purpose - 2 Tbsp
- Soy sauce, low-sodium - 1 tsp
- Mustard, Dijon - 1 tsp
- Salt - 3/4 tsp
- Onion powder - 1/2 tsp
- Garlic powder - 1/2 tsp
- Black pepper - 1/4 tsp
- Eggs - 1
- Foil - for baking
- Slider buns / rolls, small - 8
- Dill pickle slices - 1/2 cup
- Condiments of choice - for serving (such as ketchup or mustard)
- French fries, frozen and crinkle-cut - 1 lb (sub any frozen fries)
- Oil, cooking - 1 Tbsp
- Sugar snap peas - 16 oz
- Lemon juice - 1 tsp

Cheese / Onions - (If prepping right before cooking, get oven heating first.) Prep as directed and store separately. (Can be done up to 5 days ahead)

Make burger patties - Drain and rinse beans. Place beans in a mixing bowl and mash with a pastry blender or fork, leaving some larger pieces of beans intact for texture. Combine beans with onions, panko, flour, soy sauce, mustard, salt, onion powder, garlic powder, black pepper, and eggs. Form the mixture into small patties that are roughly the same size as your slider buns. (Note: If the mixture is too sticky to work with, add some additional flour until the burgers can be easily shaped.) (Can be done up to 3 days ahead)

Heat oven to 425F / 218C degrees and set out two baking sheets.

Line the first baking sheet with foil and brush with some cooking oil. Arrange black bean patties on the baking sheet and brush or spray the tops with some cooking oil. Bake for 15 minutes, then carefully flip and continue baking until heated through and firm, ~10 minutes more.

While burger patties cook, spread fries out on the second baking sheet and bake according to package directions.

While burger patties and fries are baking, heat a skillet or saute pan over medium heat with cooking oil. Add snap peas to heated oil and saute until bright green and crisp tender, 5 to 6 minutes. Remove from heat and toss with lemon juice and some salt. Set aside and cover to keep warm.

Remove burger patties from the oven and top with cheese. Return to the oven and bake until cheese is melted, ~2 minutes more.

Fill slider buns with burger patties and pickle slices.

Serve sliders and fries with your favorite condiments. Enjoy snap peas on the side.
