"Pulled" Jackfruit Gyros
with cabbage slaw

This fusion twist on traditional gyros uses Tex Mex-spiced jackfruit for the filling and creamy cabbage slaw for crunch. Top them with tomatoes and red onions for a nod to the original. This meal has been adapted from the original 2013 version.

"Pulled" Jackfruit:
  • Chili powder - 2 tsp
  • Oregano, dried - 1 tsp
  • Cumin, ground - 1 tsp
  • Salt - 3/4 tsp
  • Paprika, smoked - 1/2 tsp
  • Black pepper - 1/2 tsp
  • Garlic - 6 cloves , chopped
  • Jalapenos (opt) - 1 , seeded and diced
  • Jackfruit (20 oz / 567 g) - 1 can , drained and rinsed
  • Oil, cooking - 1 Tbsp
  • Stock, any type - 1/2 cup
"Pulled" Jackfruit Gyros:
  • Onions, medium and red - 1/2 , thinly sliced
  • Tomatoes, medium - 2 , chopped
  • Pita bread - 4 rounds
  • Cheese, feta (opt) - 2 oz , crumbled
Cabbage Slaw:
  • Mayonnaise - 1/4 cup
  • Yogurt, plain or Greek - 1/4 cup
  • Vinegar, apple cider - 2 Tbsp
  • Honey - 1 1/2 tsp
  • Coleslaw mix - 10 oz

Prep

  1. Make seasoning mix - Combine chili powder, oregano, cumin, salt, paprika, and pepper. Store in an airtight container. (Can be done up to 5 days ahead)

  2. Garlic / Jalapenos / Onions - Prep as directed. Store garlic and jalapenos together in one container. Store onions separately. (Can be done up to 5 days ahead)

  3. Tomatoes - Prep as directed.

  4. Make slaw - In a serving or mixing bowl, whisk together mayonnaise, yogurt, vinegar, and honey. Season to taste with some salt and pepper. Fold in coleslaw mix until evenly combined.

  5. Jackfruit - Drain and rinse.

Make

  1. Heat a Dutch oven with cooking oil over medium heat. Add garlic and jalapenos (if using) and saute for 2 to 3 minutes. Add jackfruit and seasoning mix and saute for 1 to 2 minutes more. Slowly pour in stock and cover with a lid.

  2. Reduce heat to low and simmer gently until jackfruit shreds easily with a fork and flavors have come together, 20 to 25 minutes. Taste and season with some salt and pepper if needed.

  3. Warm pita bread according to package directions.

  4. Assemble gyros by filling pita bread with jackfruit, tomatoes, onions, feta crumbles (if using), and slaw.

  5. Serve gyros with any extra cabbage slaw on the side. Enjoy!
