Deli-Style Veggie Sandwich

We've recreated a deli favorite with this fresh, texture-rich sandwich. This one is great for customizing (roasted peppers, avocados, or olives are great options). Just be sure to slice everything as thinly as possible, and don't skimp on the cream cheese!
Smarts #1: This sandwich can be messy to eat. A good, sturdy bread will help keep everything contained (or try rolls or bagels if you like).
Smarts #2: This meal can be made dairy-free by swapping hummus for the cream cheese. 



Deli-Style Veggie Sandwich:
  • Onions, medium and red - 1/2 , thinly sliced
  • Bell peppers, any color - 1 , thinly sliced
  • Carrots - 4 oz , shredded (2 oz equals about 1 large carrot; shred them with a box grater for better texture or look for pre-shredded to save time)
  • Dill, fresh - 1 Tbsp , chopped (sub any fresh herbs)
  • Cream cheese - 8 oz
  • Garlic powder - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Cucumbers - 1 , thinly sliced
  • Tomatoes, medium - 1 , thinly sliced
  • Bread, sandwich - 8 slices (such as multigrain or ciabatta; thick sliced works best here)
  • Sprouts, any type - 4 oz
  • Chips, any type - 4 oz , for serving
Golden Smoothie:
  • Ginger, fresh - 1/2 tsp , minced or grated
  • Mangos, fresh or frozen - 1 1/2 cups , peeled and cubed
  • Bananas - 1
  • Milk, any type - 1 1/2 cups
  • Yogurt, plain or Greek (opt) - 1/4 cup
  • Honey - 1 tsp
  • Turmeric - 1/2 tsp


  1. Onions / Bell peppers / Carrots / Ginger - Prep as directed and store separately. (Can be done up to 5 days ahead)

  2. Season cream cheese - Chop dill. Soften cream cheese briefly in the microwave (20-30 seconds). Stir in chopped dill, garlic powder, and pepper. Season with some salt if needed. (Can be done up to 5 days ahead)

  3. Cucumbers / Tomatoes / Mangoes - Prep as directed.

  4. Make smoothie - In a blender jar, combine mangoes, ginger, bananas, milk, yogurt (if using), honey, and turmeric. (If using fresh mangoes, add a small handful of ice cubes.) Blend until smooth. Taste and adjust - add more liquid if the mixture is too thick or more honey if it isn’t sweet enough.
