Chili Seasoning:
  • Chili powder - 1 Tbsp
  • Cumin, ground - 2 tsp
  • Oregano - 3/4 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
Lentil Chili Frito Pie:
  • Cheese, cheddar - 6 oz , shredded (look for pre-shredded to save time; sub Mexican blend)
  • Onions, medium white or red - 1/2 + 1/2 , chopped
  • Garlic - 2 cloves , chopped
  • Chipotle peppers - 1 , chopped (usually found canned in adobo sauce, sub green chilis or jalapenos)
  • Lettuce, romaine - 1 heart , chopped
  • Tomatoes, medium - 1 , chopped
  • Cilantro (opt) - 2 Tbsp , chopped
  • Oil, cooking - 1 Tbsp
  • Lentils, cooked - 2 cups (use pre-cooked lentils, or if cooking from dried, use half the amount of dried and prepare according to package directions)
  • Tomatoes, crushed (14 oz / 397 g) - 1 can
  • Fritos - 4 oz , for serving (sub tortilla chips)
  • Hot sauce (opt) - for serving

Prep

  1. Make Chili seasoning - Combine chili powder, cumin, oregano, salt, and pepper. Store in an airtight container. (Can be done up to 5 days ahead)

  2. Cheese / Onions / Garlic / Chipotle peppers - Prep as directed and store separately. (Can be done up to 5 days ahead)

  3. Lettuce / Tomatoes / Cilantro - Prep as directed.

Make

  1. Place a Dutch oven with cooking oil over medium heat. Add first portion of onions and garlic to heated oil and saute until onions are translucent, 4 to 5 minutes.

  2. Add lentils, crushed tomatoes, chipotle peppers, and chili seasoning and stir to combine. Reduce heat and continue to cook until everything is heated through and the flavors have come together, ~10-12 minutes. Taste and season with some salt and pepper, if needed.

  3. Set out cheese, second portion of onions, lettuce, tomatoes, and cilantro (if using).

  4. Divide Fritos among serving bowls and top with chili. Let everyone add their choice of toppings to their bowls and serve with hot sauce (if using). Enjoy!
