Chili Seasoning:
  • Chili powder - 2 Tbsp
  • Cumin, ground - 1 Tbsp
  • Oregano - 1 1/2 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
Chili Beef and Zucchini Saute:
  • Zucchini - 12 oz , chopped
  • Onions, medium white or red - 1/2 + 1/2 , chopped
  • Garlic - 2 cloves , chopped
  • Chipotle peppers - 1 , chopped (usually found canned in adobo sauce, sub green chilis or jalapenos)
  • Chili seasoning (ingredients listed separately) - 2 Tbsp + 2 Tbsp
  • Beef, ground - 1 lb
  • Lettuce, romaine - 1 heart , chopped
  • Tomatoes, medium - 1 , chopped
  • Cilantro (opt) - 2 Tbsp , chopped
  • Oil, cooking - 1 Tbsp
  • Tomatoes, crushed (14 oz / 397 g) - 1 can
  • Hot sauce (opt) - for serving

Prep

  1. Make Chili seasoning - Combine chili powder, cumin, oregano, salt, and pepper. Store in an airtight container. (Can be done up to 5 days ahead)

  2. Zucchini / Onions / Garlic / Chipotle peppers - Prep as directed and store separately. (Can be done up to 5 days ahead)

  3. Season beef - Add first portion of chili seasoning to ground beef and stir with a fork until thoroughly combined. (Can be done 1 day ahead)

  4. Lettuce / Tomatoes / Cilantro - Prep as directed.

Make

  1. Place a Dutch oven with cooking oil over medium heat. Add beef, first portion of onions, and garlic to heated oil. Saute the beef, breaking it up as it cooks, until cooked through, 5 to 6 minutes.

  2. Add zucchini and continue to cook until it begins to soften, 3 to 4 minutes.

  3. Add crushed tomatoes, chipotle peppers, and second portion of chili seasoning and stir to combine. Reduce heat and continue to cook until the vegetables are tender and the flavors have come together, ~10-12 minutes. Taste and season with some salt and pepper, if needed.

  4. Divide beef saute among serving plates and top with lettuce, tomatoes, and cilantro (if using). Serve with hot sauce (if using). Enjoy!
