Happy Pi Day! A warm, saucy bowl of Frito Pie pairs perfectly with chilly nights, math homework, or whatever you've got going on. Crispy corn chips and some fresh toppings make this quick-cooking dish an enduring favorite - a constant, you might say.
Place a Dutch oven with cooking oil over medium heat. Add beef, first portion of onions, and garlic to heated oil. Saute the beef, breaking it up as it cooks, until cooked through, 5 to 6 minutes.
Add crushed tomatoes, chipotle peppers, beans, and second portion of chili seasoning to the beef and stir to combine. Bring to simmer. Reduce heat and simmer, partially covered, for 15 to 20 minutes to allow the flavors to come together. Taste and season with some salt and pepper, if needed.
Set out cheese, second portion of onions, lettuce, tomatoes, and cilantro (if using).
Divide Fritos among serving bowls and top with chili. Let everyone add their choice of toppings to their bowls and serve with hot sauce (if using). Enjoy!
