TexMex Beef Saute:
  • Bell peppers, any color - 1 , chopped
  • Chili powder - 1 Tbsp
  • Cumin - 2 tsp
  • Garlic powder - 1 tsp
  • Salt - 3/4 tsp
  • Oregano - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Lettuce, romaine - 2 hearts , shredded
  • Tomatoes, medium - 2 , chopped
  • Green onions - 2 stalks , chopped, green and white parts combined
  • Oil, cooking - 1 Tbsp
  • Beef, ground and lean - 1 lb
  • Jalapenos, pickled (opt) - 1/3 cup (sliced)
  • Salsa, store-bought - 1/3 cup , for serving
  • Tortilla chips, paleo-friendly (opt) - for serving

Prep

  1. Bell peppers - Prep as directed. (Can be done up to 5 days ahead)

  2. Make spice mix - Combine chili powder, cumin, garlic powder, salt, oregano, and black pepper. Store in an airtight container. (Can be done up to 5 days ahead)

  3. Lettuce / Tomatoes / Green onions - Prep as directed.

Make

  1. Heat a large skillet with cooking oil over medium heat. Add bell peppers with a pinch of salt and saute for 2 to 3 minutes to get them started cooking. Add ground beef and saute, breaking it up as it cooks, until beef is cooked through and peppers are tender, 5 to 6 minutes more.

  2. Add spice mix to the skillet and stir to coat beef and peppers in spices (add a splash of water if the pan looks dry). Continue cooking until just warmed through, 2 to 3 minutes. Remove from heat.

  3. Transfer beef and peppers to a serving platter and top with chopped tomatoes, lettuce, jalapenos, and green onions.
