Spread tortilla chips evenly on a baking sheet, overlapping them slightly to minimize gaps.
Heat a large skillet with cooking oil over medium heat. Add ground beef to heated oil and saute until browned and cooked through, 5 to 6 minutes.
Add pinto beans and spice mix to the skillet and stir to coat beef and beans in spices. Continue cooking until just warmed through, 2 to 3 minutes. Remove from heat.
Spread beef and beans over tortilla chips. Top with jalapeno slices (if using) and cheese.
Transfer to the oven and bake until cheese is melted and bubbly and chip edges are golden brown, 6-8 minutes (watch them carefully to prevent burning).
When nachos are finished baking, remove from oven and top with chopped tomatoes, lettuce, and green onions.
Serve nachos with salsa and sour cream, if desired. Enjoy!
