Beef and Bean Nachos:
  • Chili powder - 1 Tbsp
  • Cumin - 2 tsp
  • Garlic powder - 1 tsp
  • Salt - 3/4 tsp
  • Oregano - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Cheese, cheddar - 6 oz , shredded (look for pre-shredded to save time; sub Mexican blend)
  • Lettuce, romaine - 2 hearts , shredded
  • Tomatoes, medium - 2 , chopped
  • Green onions - 2 stalks , chopped, green and white parts combined
  • Beans, pinto (14 oz / 397 g) - 1 can , drained and rinsed
  • Tortilla chips - 6 oz
  • Oil, cooking - 1 Tbsp
  • Beef, ground and lean - 1 lb
  • Jalapenos, pickled (opt) - 1/3 cup (sliced)
  • Salsa, store-bought (opt) - for serving
  • Sour cream (opt) - for serving

Prep

  1. Make spice mix - (If prepping right before cooking, get oven heating first.) Combine chili powder, cumin, garlic powder, salt, oregano, and black pepper. Store in an airtight container. (Can be done up to 5 days ahead)

  2. Cheese - Shred cheese if not pre-shredded. (Can be done up to 5 days ahead)

  3. Lettuce / Tomatoes / Green onions - Prep as directed.

  4. Beans - Drain and rinse.

Make

  1. Heat oven to 400F / 204C degrees.

  2. Spread tortilla chips evenly on a baking sheet, overlapping them slightly to minimize gaps.

  3. Heat a large skillet with cooking oil over medium heat. Add ground beef to heated oil and saute until browned and cooked through, 5 to 6 minutes.

  4. Add pinto beans and spice mix to the skillet and stir to coat beef and beans in spices. Continue cooking until just warmed through, 2 to 3 minutes. Remove from heat.

  5. Spread beef and beans over tortilla chips. Top with jalapeno slices (if using) and cheese.

  6. Transfer to the oven and bake until cheese is melted and bubbly and chip edges are golden brown, 6-8 minutes (watch them carefully to prevent burning).

  7. When nachos are finished baking, remove from oven and top with chopped tomatoes, lettuce, and green onions.

  8. Serve nachos with salsa and sour cream, if desired. Enjoy!
