Everything Breakfast Bowl
with soft-boiled eggs / spinach / hash browns
These bowls, which we first featured in 2022, have the simplicity and heartiness of a good diner breakfast. We've given them a modern twist with avocados and Everything Bagel Seasoning sprinkled on top.
Smarts #1: Feel free to use other types of frozen potatoes, such as hash brown patties or tater tots (just follow the package directions).
Smarts #2: You can buy pre-mixed Everything Bagel Seasoning or search for a recipe to make it yourself - you likely already have everything you need in the pantry.
Ingredients
- Shredded hash browns, frozen - 20 oz , defrosted (sub hash brown patties or tater tots)
- Garlic - 2 cloves , chopped
- Tomatoes, cherry or grape - 1 cup , halved (sub any tomatoes)
- Avocados - 1 , chopped
- Oil, olive - 1 Tbsp
- Baby spinach - 5 oz
- Lemon juice - 1 tsp
- Oil, cooking - 2 Tbsp
- Eggs - 8
- Everything Bagel Seasoning - 1 Tbsp
- Hot sauce (opt) - for serving

Thaw hash browns - Check the package instructions on the frozen hash browns. Most recommend you thaw them before using, so be sure to do this before you get started. If using another type of frozen potatoes, follow package instructions. (Can be done 1 day ahead)

Garlic - Chop garlic. (Can be done up to 5 days ahead)

Bring a small saucepan of water (for the eggs) to a boil. (If the water starts to boil before you are ready to add the eggs, reduce the heat to maintain a low simmer.)

While waiting for the water to boil, place a large nonstick pan over medium heat. Add olive oil, garlic, and spinach with some salt. Saute until spinach is wilted, 2 to 4 minutes. Squeeze lemon juice over top. Transfer spinach to a bowl and cover to keep warm.

Wipe out the pan and add cooking oil. Add hashbrowns, spreading them out in a single layer. Season with some salt and pepper. Allow the hash browns to cook on one side until deep golden brown. Continue to cook, flipping with a spatula, until all of the hash browns are golden and crisp, 8 to 12 minutes total.

When hash browns are nearly done cooking, bring the water for the eggs back to a boil. Gently add eggs to boiling water and boil for exactly 7 minutes (this should yield cooked whites and runny yolks so adjust the time if you’d like your eggs cooked differently). When eggs are finished, transfer to a colander and run under cool water.

Peel eggs.

Divide hash browns between serving bowls. Top with spinach, eggs, avocados, and tomatoes. Sprinkle Everything Bagel Seasoning over top and add hot sauce if you’d like. Enjoy!
