  1. Bread - (If prepping right before cooking, get oven heating first.) Slice or tear bread into 1” / 2.5 cm cubes. (Can be done up to 5 days ahead)

  2. Make egg batter - Whisk together eggs, milk, vanilla extract, cinnamon, and salt.

  3. Make smoothie - In the bowl of a blender, combine bananas, spinach, orange juice, and frozen fruit (if using) or ice. Blend until smooth and creamy. Taste and add more liquid or sweeten with some honey if needed.

Make

  1. Heat oven to 400F / 204C degrees and line a sheet pan with foil. Butter a 9” square baking dish (for 4 servings, adjust if customizing) or line with parchment paper.

  2. Place bread cubes into the baking dish and pour egg mixture over top. Use the back of a spoon to press the bread into the egg mixture, making sure all the bread is saturated.

  3. Combine the butter and brown sugar in a small bowl and melt in the microwave (about 30 seconds). Stir to combine and drizzle over top of the bread.

  4. Transfer French toast to the upper oven rack and bake for 20-25 minutes or until the inside is set and the top is golden and crispy.

  5. While French toast bakes, spread vegan sausage on out onto the sheet pan. Transfer to the oven and bake according to package directions, or until sausages are browned and internal temperature reaches 165F / 74C degrees.

  6. Divide French toast among serving plates and let everyone add their favorite toppings. Serve with sausages and smoothies on the side. Enjoy!
