Baked French Toast
with sheet pan breakfast sausage / spinach-banana smoothie
In honor of French Toast Day, we've transformed this brunch favorite into a weeknight-friendly casserole that won't leave you standing over the stove. Make a quick smoothie while the rest of the meal bakes, and dinner is done! This also makes a lovely, hands-off breakfast or brunch if you're hosting holiday guests.
Smarts: Set out an assortment of toppings (syrup, fruit, whipped cream, powdered sugar - the sky's the limit) and let each person customize!
Ingredients
- Bread - 8 oz , cubed or torn (French, challah, or sturdy sandwich bread are all good here)
- Eggs - 4
- Milk, any type - 1 1/2 cups
- Vanilla extract - 1 tsp
- Cinnamon, ground - 1/2 tsp
- Salt - 1/4 tsp
- Butter - 2 Tbsp (plus more for greasing the pan)
- Brown sugar - 2 Tbsp
- Optional toppings such as maple syrup, powdered sugar, or berries - for serving
- Foil - for baking
- Breakfast sausage, any type - 1 lb , links or patties
- Bananas - 2
- Baby spinach - 3 oz
- Orange juice - 1 1/2 cups (sub water or milk)
- Frozen fruit, any type (opt) - 1 cup (sub ice)

Bread - (If prepping right before cooking, get oven heating first.) Slice or tear bread into 1” / 2.5 cm cubes. (Can be done up to 5 days ahead)

Make egg batter - Whisk together eggs, milk, vanilla extract, cinnamon, and salt.

Make smoothie - In the bowl of a blender, combine bananas, spinach, orange juice, and frozen fruit (if using) or ice. Blend until smooth and creamy. Taste and add more liquid or sweeten with some honey if needed.

Heat oven to 400F / 204C degrees and line a sheet pan with foil. Butter a 9” square baking dish (for 4 servings, adjust if customizing) or line with parchment paper.

Place bread cubes into the baking dish and pour egg mixture over top. Use the back of a spoon to press the bread into the egg mixture, making sure all the bread is saturated.

Spread sausage out onto the sheet pan and transfer to the lower oven rack. Bake until deeply browned and cooked through, ~20 minutes. Remove and transfer to a paper towel-lined plate.

Combine the butter and brown sugar in a small bowl and melt in the microwave (about 30 seconds). Stir to combine and drizzle over top of the bread.

Transfer French toast to the upper oven rack and bake for 20-25 minutes or until the inside is set and the top is golden and crispy.

Divide French toast among serving plates and let everyone add their favorite toppings. Serve with sausages and smoothies on the side. Enjoy!
