Tartar Sauce:
  • Capers - 2 Tbsp , chopped
  • Mayonnaise - 1/2 cup (sub plain or Greek yogurt)
  • Lemon juice - 1 Tbsp
Tuna Burgers:
  • Green onions - 1 stalk , finely chopped (green and white parts combined)
  • Tuna, canned (5 oz / 142 g) - 2 cans , drained
  • Eggs - 1
  • Panko breadcrumbs - 1/2 cup
  • Yogurt, plain or Greek - 3 Tbsp
  • Basil, dried - 1 tsp
  • Hot sauce (opt) - 1 tsp
  • Worcestershire sauce - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Parchment paper - for prep
  • Lettuce, green leaf - 4 leaves
  • Tomatoes, medium - 1 , sliced
  • Oil, cooking - 2 Tbsp
  • Sandwich buns - 4
Sweet Potato Wedges:
  • Sweet potatoes - 1 1/2 lbs , sliced into wedges
  • Oil, cooking - 1 Tbsp

Prep

  1. Sweet potatoes - (If prepping right before cooking, get oven heating first.) Prep as directed. (Can be done up to 5 days ahead)

  2. Make Tartar Sauce - Drain and chop capers. Combine capers with mayonnaise and lemon juice and stir well. (Can be done up to 5 days ahead)

  3. Green onions - Prep as directed. (Can be done 1 day ahead)

  4. Make tuna patties - Drain tuna well. In a large bowl, combine tuna with green onions, eggs, panko, yogurt, basil, hot sauce (if using), Worcestershire sauce, salt, and pepper. Mix gently until combined. Form into patties, one per serving. Place patties on a plate lined with parchment paper and refrigerate until ready to cook (this will firm up the patties and help them hold together during cooking). (Can be done 1 day ahead)

  5. Lettuce / Tomatoes - Prep as directed.

Make

  1. Heat oven to 425 F / 218 C degrees.

  2. Toss sweet potatoes with cooking oil (portion for sweet potatoes) and some salt and pepper and spread out on a sheet pan.

  3. Transfer sweet potatoes to the oven and bake, shaking the pan a few times while they cook, until tender and deeply browned, 25 to 30 minutes.

  4. While sweet potatoes bake, heat a non-stick skillet over medium heat with cooking oil (portion for burgers). Add burgers to heated oil and cook until golden brown on both sides, 5 to 6 minutes per side. Transfer to a paper towel-lined plate.

  5. Toast sandwich buns, if desired.

  6. Fill buns with lettuce, tomatoes, burgers, and tartar sauce.

  7. Serve tuna burgers with sweet potato wedges on the side and extra tartar sauce for dipping. Enjoy!
