Tonight's turkey saute combines roasted sweet potatoes from earlier in the week with southwestern spices for maximum ease and flavor. We love the punch of heat from adobo sauce, but feel free to adjust the amount or omit it if you prefer.
Heat oven to 425 F / 218 C degrees. Spread green beans out on a baking sheet and toss with cooking oil and cumin (portions for beans). Season with some salt and pepper. Roast beans, shaking the pan halfway through, until they are crisp-tender and beginning to brown in spots, 8 to 10 minutes. Toss finished beans with lime juice (portion for beans).
While green beans roast, heat a large saute pan with cooking oil (portion for turkey saute) over medium heat. Add turkey, garlic, and green onions to heated oil. Saute until turkey is cooked through, breaking it apart as it cooks, 6 to 8 minutes.
Stir spice mix into turkey and cook until spices are fragrant, 1 to 2 minutes. Add stock, sweet potatoes, and adobo sauce (if using) and continue to cook until everything is heated through and the flavors have come together, 3 to 4 minutes more. Remove from heat and stir in lime juice (portion for turkey saute). Season to taste with some salt and pepper.
Serve turkey saute with roasted green beans on the side. Enjoy!
