Broiled salmon topped with lemon and herbs is loaded with flavor and ready in minutes. Paired with Italian-style zucchini noodles, this meal is both simple and elegant.
Heat the oven’s broiler. Line a sheet pan with foil and spray with nonstick cooking spray or brush with some oil. Place salmon skin side down on the baking sheet. Spread seasoning mixture over fish and top with lemon slices.
Place salmon under the broiler and broil until it flakes easily with a fork, 5 to 8 minutes depending on thickness.
While the salmon cooks, heat a large, nonstick skillet with olive oil (portion for zucchini noodles) over medium heat. Add garlic (portion for zucchini noodles) to heated oil. Cook until golden and fragrant, 1 to 2 minutes.
Add zucchini with a pinch of salt and continue to saute until tender, ~2 minutes for zucchini noodles or ~4 minutes for slices.
Add basil to zucchini noodles and toss to combine. Season to taste with some salt and pepper.
Serve salmon with zucchini noodles on the side. Enjoy!
