One of the most fun things about this fried cauliflower 'rice' that is inspired by Indonesian Nasi Goreng is how colorful it is on the plate. Not only is it finished with a sunny-side up egg, but it is served with fresh cucumbers and tomatoes for added texture and flavor. We first featured this meal in 2021.

Cauliflower Rice:
  • Cauliflower florets - 12 oz , riced
  • Butter - 1 Tbsp
Tomatoes and Cucumbers:
  • Tomatoes, medium - 1 , thin wedges
  • Cucumbers - 12 oz , matchsticks
Ground Pork Cauliflower Fried ‘Rice’:
  • Bell peppers, red - 1 , diced
  • Onions, medium - 1/2 , diced
  • Garlic - 2 cloves , chopped
  • Ginger, fresh - 1 tsp , grated
  • Bragg's / coconut aminos - 1 Tbsp + 2 tsp
  • Honey - 1 tsp + 1 tsp
  • Fish sauce - 2 tsp
  • Vinegar, rice - 2 tsp
  • Oil, cooking - 1 Tbsp + 1 Tbsp
  • Pork, ground - 1 lb
  • Eggs - 4
  • Hot sauce (opt) - for serving

Prep

  1. Cauliflower rice - (Skip if made ahead for Monday) Pulse florets in a food processor until broken up into ‘rice’-sized bits. Cook rice in one of two ways: 1) Microwave for 4 to 5 minutes and then fold in butter. Season with some salt and pepper; or 2) Heat a pan over medium-high heat and add butter. Saute cauliflower in heated butter for ~5 minutes, until tender but still crunchy. Season to taste with some salt and pepper. Watch this video for the full how-to on cauliflower rice.   2. Bell peppers / Onions / Garlic / Ginger - Prep as directed and combine. (Can be done up to 5 days ahead)

  3. Make seasoning - Whisk together first portion of aminos, first portion of honey, fish sauce, and rice vinegar. (Can be done up to 5 days ahead)

  4. Tomatoes / Cucumbers - Prep as directed.

Make

  1. Heat a skillet or wok with first part of cooking oil over medium-high heat. Add pork and saute, breaking it apart until cooked, 6 to 8 minutes. Drain off excess oil from pork.

  2. To pork, add second portion of aminos and second portion of honey. Saute until pork is lightly caramelized, 3 to 4 minutes more.

  3. Stir in bell peppers, onions, garlic, and ginger. Saute until very tender, 4 to 5 minutes. Add seasoning and bring to a simmer.

  4. When seasoning is simmering, add in cauliflower rice and cook everything together until cauliflower rice is warmed through and evenly coated in seasoning.

  5. Remove from heat and cover to keep warm.

  6. Heat a nonstick pan over medium-high heat. Add second part of cooking oil and then crack eggs into heated oil. Cook eggs on one side until whites are set and yolks are still a bit runny, 4 to 6 minutes. (If you’d like the eggs more cooked, flip and cook on the other side.)

  7. Divide cauliflower rice between serving plates and top each portion with a fried egg. Serve cucumber and tomato slices on the side. Serve with hot sauce if you’d like it spicy. Enjoy!
