Prep

  1. Bell peppers / Onions / Green beans - (If prepping right before cooking, get grill heating before continuing with prep.) Slice peppers and onions into thin strips (keep them a size that won’t fall through the grill grates or use a grill basket). Store bell peppers and onions in one container. Store green beans separately. (Can be done up to 5 days ahead)

  2. Make burgers - Mix together beef, salt, garlic powder, black pepper, and Worcestershire sauce. Form into 1" / 2.5 cm thick patties and make a depression in the center with your thumb (this will prevent them from rounding in the middle as they cook). (Can be done 1 day ahead)

  3. Pre-cook green beans - Place beans in a microwave-safe dish and cover with a damp paper towel. Cook on high until beans begin to turn tender, 3 to 5 minutes (if your beans are very thin or if you like them firm, you can skip this step).

  4. Make dijonnaise - Mix together mayonnaise and mustard until well combined.

Make

  1. Heat grill to 450F / 232C. Clean the grates and brush with some cooking oil.

  2. Toss bell peppers and onions with cooking oil (portion for burgers) and some salt. Grill with the lid closed until tender (stir them occasionally but try not to open the lid too much), 6 to 8 minutes. Transfer to a bowl and cover to keep warm.

  3. Place burger patties on the grill and cook on one side until grill marks appear, 2 to 3 minutes. Flip burgers and continue cooking until cooked to your liking - 2 to 3 minutes more for medium-rare, 3 to 4 minutes more for medium, 5 to 6 minutes more for well-done. When burgers are nearly done, top with cheese slices.

  4. While burgers cook, toss green beans with cooking oil (portion for green beans), red pepper flakes (if using), and some salt. Cook green beans in a grill basket until tender and beginning to brown in spots, 5 to 6 minutes. Transfer to a bowl and toss with lemon juice.

  5. Toast hamburger buns.

  6. Spread buns with dijonnaise and top with burgers, peppers and onions, and pickles (if using). Enjoy with green beans on the side.
