Fries:
  • Frozen fries, regular or sweet potato - 1 lb
  • Dipping sauce, like ketchup (opt) - for serving
Everything Bagel Tofu Tenders:
  • Tofu, extra-firm - 16 oz , 1” / 3 cm thick strips (vacuum-packed preferable)
  • Panko breadcrumbs - 1/2 cup
  • Everything Bagel Seasoning - 1/3 cup
  • Oil, cooking - 1 Tbsp + 1 Tbsp
Creamy Honey Mustard Dressing:
  • Mustard, Dijon - 1/4 cup
  • Honey - 1/4 cup
  • Mayonnaise - 3 Tbsp (sub plain or Greek yogurt)
  • Vinegar, red or white wine - 1/2 tsp
Roasted Broccoli:
  • Broccoli - 1 lb , florets
  • Oil, olive - 1 Tbsp

Prep

  1. Tofu - If tofu is packaged in water, press out liquid first, like in this video. Then slice into 1" / 3 cm strips that are a good size for dipping. (Can be done 1 day ahead)

  2. Broccoli - (If prepping right before cooking, get oven heating first.) Chop broccoli. (Can be done up to 5 days ahead)

  3. Make honey mustard dressing - Whisk together mustard, honey, mayonnaise, and vinegar. (Can be done up to 5 days ahead)

  4. Marinate tofu - Combine tofu with 3 Tbsp / 45 mL of honey mustard dressing (this is for 4 servings; adjust if customizing; reserve the remaining dressing for dipping). Marinate for at least 20 minutes or up to two days. (Can be done up to 2 days ahead)

  5. Prep breading - Combine panko and bagel seasoning in a shallow baking dish.

Make

  1. Heat oven to 425F / 218C. Place one oven rack in the upper third and one in the lower third of the oven.

  2. Set out two sheet pans.

  3. On the first sheet pan toss broccoli with olive oil and some salt and pepper. Transfer broccoli to the oven and roast for 10 minutes to get it started cooking.

  4. Spread oven fries out on the second sheet pan and bake until golden, shaking the pan halfway through cooking. (Note: Check the package directions for recommended cook time.)

  5. When broccoli has been baking for 10 minutes, move it all to one side of the sheet pan. Drizzle the open side of the sheet pan with the first portion of cooking oil.

  6. Working with one tofu tender at a time, firmly press it into the breading to coat on all sides. Add tofu to the open side of the sheet pan. Drizzle the tofu tenders with the second portion of cooking oil (or spray them with olive oil spray; this will help the breading to turn more golden brown and crisp).

  7. Return the pan with the broccoli and tofu tenders to the oven and continue baking until the broccoli is done cooking and the breading on the tofu is crisp, 10 to 15 minutes.

  8. Serve tofu with broccoli and fries on the side. Serve with the remaining creamy honey mustard for dipping everything!
