with Gochujang mayo / vegetables / Furikake fries

This fun and football-friendly (though it's also any-regular-weeknight-friendly) meal uses a few of our favorite Asian seasonings to spice things up.

Korean Baked Tofu Strips:
  • Tofu, extra-firm - 16 oz , sliced into strips (vacuum-packed preferable)
  • Honey - 1 1/2 Tbsp
  • Soy sauce, low-sodium - 1 Tbsp
  • Gochujang - 1 Tbsp
  • Green onions - 1 stalks , chopped, green and white parts combined
  • Foil - for baking
Gochujang Mayo and Vegetables:
  • Mayonnaise - 1/3 cup
  • Gochujang - 1 Tbsp
  • Carrots - 8 oz , sliced into sticks for dipping
  • Celery - 4 ribs , sliced into sticks for dipping
Furikake Fries:
  • French fries, frozen - 1 lb
  • Nonstick cooking spray or olive oil spray - for fries
  • Furikake - 1 Tbsp

Prep

  1. Tofu - (If prepping right before cooking, get oven heating before continuing with prep.) If tofu is packaged in water, press out liquid first, like in this video. Then slice into strips. (Can be done 1 day ahead)

  2. Make glaze for tofu - Whisk together honey, soy sauce, and Gochujang (portion for tofu). (Can be done up to 5 days ahead)

  3. Make Gochujang mayo - Combine mayonnaise and gochujang (portion for vegetables).

  4. Carrots / Celery - Slice into sticks. If prepping ahead, soak in water in the refrigerator. (Can be done up to 3 days ahead)

  5. Green onions - Prep as directed.

Make

  1. Heat oven to 450F / 232C. Place one oven rack in the top third and another oven rack in the lower third of the oven. Set out two sheet pans.

  2. Line the first sheet pan with foil. Spray the foil with some nonstick cooking spray or brush it with some oil. Spread the tofu out in a single layer. Season the tofu with some salt and pepper. Roast tofu until it is starting to brown around the edges, ~20 minutes. 

  3. Once the tofu is baking, spread the frozen fries out on a sheet pan. Spray the fries lightly with nonstick cooking spray and then sprinkle furikake over top. Bake on the lower rack of the oven until golden and crisp. (Check package directions for recommended cook time.)

  4. After the tofu has been cooking for 20 minutes, remove it from the oven and brush it generously with glaze. Return the tofu to the oven and continue baking until the glaze is bubbling and golden, ~5 minutes. 

  5. Serve fries and vegetables with Gochujang mayo for dipping. Top tofu with green onions and enjoy it on the side.
